Zucchini French Fries

I just made the recipe of zucchini french fries that someone posted on the board a few days or weeks ago. I just wanted to say Thank You! They were delicious and I am upset that I did not know who posted it..... so if you read this, thanks again. Very, very healthy snack. :)

    Here is the recipe. I had to have my son help me scan the document and post it.

    Zucchini "Fries" Recipe

    Ingredients:

    3 medium zucchini
    1 large egg white
    2/3 cup Panko breadcrumbs
    Misto or other olive oil cooking spray
    1/4 tsp garlic salt
    Fresh ground pepper

    Directions:

    1. Preheat oven to 425°.

    2. Chop the zucchini up into the size "fries" you want.

    3. Whisk the egg white in a bowl with the garlic salt and fresh ground pepper. Pour the Panko into a ziploc bag.

    4. Spray a baking sheet with your olive oil spray. Coat the zucchini sticks in the egg white mixture, then place in the ziploc bag and shake bag to coat the sticks with Panko. Place the breaded sticks on the baking sheet in a single layer. Spray the tops of the breaded sticks as well.

    5. Bake for 20-25 minutes and serve hot with marinara sauce.

    Makes 4 servings, each serving is:
    Calories: 92
    Carbs: 14
    Fat: 4
    Protein: 4
    Fiber: 3
    Sodium: 161

    Are they crispy, or do they get mushy in the middle? This might be a good way to use up the giant zucchinis this summer!!

    They are crispy on the outside (thanks to the Pankos) and soft on the inside. You can cook them a little longer if you want them crispier.

    Our local Kroger has a Parmesan Herb Panko crumb mix that is really good on zucchini fries and baked onion rings.

    For onion rings, the recipe I found said to soak the rings in buttermilk for 2-3 hours. Then roll them in panko. Very similar to the zucchini fries.

    I also found a recipe for baked fried pickles I'm going to try. Not sure if it's going to be good or not but I will make ranch dip out of plain greek yogurt to go with them.
