we take thin sliced ham and put it into our baby cakes maker. mix up some scrambled eggs with veggies and pour it into the ham cups. Depending on how many veggies I put in the eggs I can get three cups from one scrambled egg. Looks like more than you actually have.
Toast and Peanut Butter
bagel/english muffin and cream cheese/laughing cow
cheese and veggie quesadilla
english muffin breakfast pizza (muffin, salsa, veggies, meat and/or eggs and/or cheese)
grilled cheese and tomato soup0 -
I juice veggies (with some fruit for flavor) for breakfast and I add unflavored whey protine powder to it. I actually do two a day.
Breakfast: 3-4 large leaves of Kale, 3-4 large leaves of Swiss Chard, 3-4 medium (6-8 inch) carrots, 15-20 sprigs of Parsley and 2 medium green apples (or you can substitue pears).
Post Work-out: 3-4 large leaves of Kale, 3-4 large leaves of Swiss Chard, 4 large (9-12 inch) stalks of celery (great source of electrolites), 1 1/2-2 cups of grapes and 2 apples (again, or pears).
That's just the basis for the drinks. Sometimes I'll add strawberries or oranges. Even a little (stress LITTLE) amount of ginger tastes good.
Add the protine to that and you have nearly a full days worth of veggies and fruits and 40g of protine.
Also, they taste great! I can't live without them! Well, I can, but I don't want to.0 -
Protein shakes - I add peanut butter and a banana to mine. Delish
I know you said your tired of eggs, but it looks like you don't have much variety. I make a breakfast burrito often - 1/2c scrambled egg whites, spinach, onions, green and red peppers, and onions on a tortilla with guacamole. It actually works out to a perfect 40-30-30 breakdown of carbs, fat and protein. Absolutely delicious. I will vary it up, the other morning I used asparagus, sometimes I use salsa....whatever veggies you have around work great. Guacamole is a fabulous substitute for cheese, strangely enough. I'm a cheese-a-holic and don't need to add cheese if I use guac.
I also still eat egg salad on occasion, and yes, I use the dreaded full fat mayo, but I don't use much (1tsp) and I eat it on a bed of mixed greens with salsa. I've also seen people eat mashed chickpeas mixed with a wedge of laughing cow soft cheese. I haven't tried it yet but it sounds great. I can't see why you still couldn't have the eggs and sub the mayo for the laughing cow cheese if you want.
When all else fails, nut butter on a whole wheat english muffin.0 -
Low-Carb Sausage Balls
These are yummy and very easy to grab on your way out the door if you make them ahead of time.
1 lb turkey breakfast sausage
1/2 cup shredded cheese
2 eggs
2 tbsp coconut flour (or grated parmesan)
Pepper
Pre-heat oven to 350. Mash everything together in a bowl with your hands. Use a tbsp to scoop out meat mixture and roll into little ball. This should make between 25-30 balls. Cook for 30 minutes then flip over and bake another 10-15 minutes. I like mine really well done and a little crunchy on the outside. You may need to experiment with the time a little. I just watch mine really close.
what is the calories for these? ?
Of course it will vary slightly based on what brands you use, if you use coconut flour or parmesan (I use coconut flour for extra fiber) and how big or small you make them but mine came out to 53 calories each with 25 balls.0 -
Cottage cheese with fruit, and one of my favorites is mixing up greek yogurt with chia seeds and fruit the night before, so I have a breakfast ready in the morning.
Or eat quinoa instead of oatmeal0 -

Chicken
Eggs
Peanut butter
If you get tired of eggs, you're not making them right. There are so many egg recipes out there and so many great ways to cook them from scrambled to fried and an immeasurable number of inbetweens. Breakfast burritos, omelets, french toast, egg salad, boil them, broil them....I feel like Bubba going on, but seriously. Use Google and find new ways to make your eggs because you would be hard pressed to find a more awesomely nutritional powerhouse than the egg.0 -
I like Kashi go lean original. As much protein as an egg!0

... that will keep me full until lunch!?
For me there is no such thing! lol But it's okay becuase I'd rather eat smaller meals and have snacks in between.0 -

You need to let go of the notion that you have to eat "traditional" breakfast foods for breakfast. Who says you can't have a piece of grilled chicken for breakfast?
^^ This!
I like to eat salmon for breakfast a lot. I've added scallops to my egg white omelets. I've been in a restaurant before where they serve an Italian omelet that is Meatballs and Mozzarella cheese in the middle and topped with marinara. I always thought that would be awesome to make healthy using seasoned turkey sausage and low-fat mozzarella.
I also really like smoothies made with peanut butter, cocoa powder, a banana and plain non-fat yogurt and ice of course!0 -
Nut/seed butters (my wife & I use almond, sesame seed, and cashew butters)
Kashi Go-Lean Crunch (one serving is 9 grams of protein, 1-1/2 times more than an egg)
Smoothies with protein powder
Beans (I know this may sound weird, but we started it after my wife read The 30-Day Diabetes Miracle, and know we look forward to them. It's really a cultural thing; when I mentioned it to a friend who had once lived in New Mexico, he said, "If you lived out there, you probably would have grown up with beans for breakfast every day!")0 -

According to 60 minutes, with my high sugar intake, I'm living on borrowed time anyway.0 -
Steak --- I'm serious -- you won't want to eat again until about 3 pm. Who says you can't have steak for breakfast? Also left over stew from the night before --- forget traditional breakfast and eat whatever you want even if it's traditionally a lunch or dinner type food.0

I often do an egg white scramble with black beans and maybe some salsa..... and also some veggies.... today it was sauteed cauliflower..... and a protein shake (black beans, canned pumpkin, chocolate protein powder, soy or coconut/almond milk, ice, cocoa powder) -- today my breakfast was 353 calories, 2g fat, 38g carbs, 8g fiber, 43g protein & 467mg sodium. This is a typical day for me..... I make my breakfast at least 30g of protein on a daily basis. Cereal or oatmeal are too carby, and not enough protein.0

I like Kashi go lean original. As much protein as an egg!
An egg only has like 6g of protein - that is not enough to start the day.0 -
^that *kitten* will kill you bro. Don't you watch Dr Oz?
It's true! Everybody who ate eggs an 1792 is now dead.0 -
Tuna salad in lettuce cups
Chicken stir fry
Crustless quiche
Breakfast casserole
Pulled pork in corn tortillas
For me, breakfast is more about meals I can make in 7 minutes or less and carry in the same hand as my coffee mug, which basically means either contained eggs, a protein shake, microwaved breakfast sausage, or leftovers. The above ideas fall either in the "leftovers" pile or in the "stuff I prepped the night before" pile.
I don't know how crazy your tastebuds are, but I once made a frittata with kimchi and goat cheese that was amaaaaaazing...0 -
protein pancakes.
baked egg cups
poached egg with roasted veggies
green smoothie (w/ protein added)
these are some of my faves.0 -
Power Coffee as i call it - 1 scoop of chocolate protein powder in your cup of coffee...0

Even if you're tired of eating eggs, I know a way you can eat your eggs without eating eggs. Bahaaha it's like a riddle. Eggs are tasty when added to oatmeal (which you already eat) and it makes your oatmeal taste awesome too!! Just mix in a beaten egg into cooking oatmeal (not boiling oatmeal) and stir really fast to prevent scrambling... and voila you have oatmeal custard. Add sweeteners/fruit/nuts/whatever and it's oatmeal on steriods with extra protien.0

Low Carb Pancakes from South Beach Diet:
Mix together half a cup of old-fashioned oatmeal, a quarter cup of low-fat cottage cheese, two eggs, and a dash each of vanilla extract, cinnamon, and nutmeg. Process in a blender until smooth. Cook the mixture like a regular pancake.

Four ounces of smoked salmon on a toasted thin bagel with whipped cream cheese, red onion slices, and capers.0

I love my Green Shakes in the morning. Spinach, Kale, Broccoli, Blueberries, Strawberries, Kiwi, Grapes, Whole Nectar Protein Powder, Water/Ice. Some of the fruits will be swapped out for Oranges, Pineapple or Apples depending on what we have on hand.
Though, sometimes I will switch that up with a Choco-Banana shake: Almond Milk, Bananas, PB2, Chocolate Protein powder, Ice.
And I usually toss a serving of Chia seeds per person in almost any shake I make.0 -
I LOVE oatmeal, so I make it (with water) and then mix in vanilla protein powder and PB2 along with some flaxseed on top. It's super yummy and filling.
I also sometimes do scrambled egg/egg whites with chopped up onions, peppers, and some type of cut up turkey sausage mixed in.
Another yummy thing, but usually too sweet for me to have first thing in the morning is to take a container of plain greek yogurt and mix in 1 scoop of chocolate protein powder and PB2. Mix all together and it's a super filling and yummy chocolate treat0 -
Wow! You all are amazing! I truly appreciate all of your suggestions and ideas! I feel ready to try some new things for sure, and motivated to revamp some of my egg recipes :-)
Much love to MFP community!0 -
Another thing you could do with eggs is take out the yolk from a hardboiled one (or two or three!) and replace it with hummus (sorry if someone else already suggested that, I didn't read every single post)0
