    I found s biggest loser recipie for spaghetti squash with avacado pesto. I have modified it a bit to make more but it is still super low cal

    1 avacado
    3 -4 tbsp parmesian
    hanf full of basil or parsley or a mix...make sure tyou wash it well. i ended up with sand in my sauce once.
    1 clove of garlic
    salt and peper to taste
    warm water about 1/2 cup


    I put it all in my mini processor pour half the water in a hi tthe button. Ad a bit more water if you need to to make it creamer

    Love spaghetti squash. Was one of my faves when I was a vegetarian. If you want something freakin' awesome, try this!

    1 spaghetti squash (poke holes in it with a knife or fork, microwave for 15 minutes or so in a plate of water, flip halfway)
    Yellow onion, garlic, fennel/anise, tomatoes, basil, EVOO, salt, pepper, and a little Parmesan.

    Get the spaghetti squash going, and throw in your onions and garlic and anise to a little heated EVOO. Get them to a nice golden brown color. While the onion, garlic, and anise is browning, dice some tomatoes and also take the squash out of the microwave and split it in half. It will be super hot so be careful. Take the seeds out and then start scraping the inside with a fork to get the "spaghetti" out.

    Throw the spaghetti squash in with your onion, garlic and anise and let it cook a little longer, add in seasonings. Add tomatoes and some fresh basil last and then top with a little Parmesan! Soooo good!

    I have totally replaced pasta with spaghetti squash and also mix it up sometimes by using butternut instead. I plan to grow my own this summer :)

    AGREED!!! I looked everywhere for this stuff..Kroger..Trader Joe's...WHERE DO YOU GET SPAGHETTI SQUASH???

    My aunt introduced me to spaghetti squash when I stayed with her over the summer a few years ago. I remember she pulled two huge squashes out of the fridge, and them put them in the oven and baked them. She cut then open horizontally, handed me one (yes, the whole squash!) and she poured a can of spaghetti sauce over it. We both pigged out on our own squash, and my god it was one of the best things I've ever eaten.

    I use it in any recipe that calls for spaghetti, fettucine, or angel hair. I don't like pasta so this was a great find for me. Mine and my kids' favorite is low carb spaghetti and meatballs. I stuff the meatballs with mozarella cheese and spinach instead of using bread crumbs to hold the meatballs together and I make my own sugar free sauce so it's low in carbs. I also like to sautee the spaghetti squash (after I bake it) with evoo, basil, diced tomatoes, shallots, italian sausage and mushrooms for a nice low carb lunch.

    It's in the produce section with the winter/hard squashes here in Oregon. I have bought it at several different stores.
  • I recently tried Spaghetti Squash, it has made a place in my menu as well. I just have it on the side. I did chicken cabobs on the grill. I ate the chicken, bell peppers, pineapple, and onion all together.
  • I look forward to trying some of these recipes.

    Just ate spaghetti squash for dinner (my first time eating it!)

    I made it with EVOO, Italian seasoning, fresh basil, and parmesan cheese....let's just say it took everything I had not to eat the whole 2lb squash I roasted.....SOO DELICIOUS!!!! I will absolutely be eating this again and frequently!!

    bump. I need some new ideas for this as well. I just bake it and add some cooked onion and green pepper to it with a little EVOO and what ever seasonings I'm in the mood for at that time.
