Pumpkin Cupcakes
I made these today and they are very moist and delicious. Don't have a calorie count, but 1 cupcake won't mess up your day.:laugh:
1 box pillsbury reduced sugar yellow cake mix
1 15 oz. can pumpkin
1/4 c. water
4 egg whites
1/2 c. cinnamon applesauce
1/4 tsp. cinnamon
1/4 tsp. nutmeg
I made about 28 cupcakes. Mix all ingredients until well blended. Bake at 350 for about 23 min. Enjoy!:flowerforyou:

Sounds awesome... I've been dying to make something pumpkin for fall. Do they taste similar to a spice cake/carrot cake/banana bread type of taste? I'm not a big fan of pumpkin, but I think I'd like them, if they're similar.
Another option is a box of cake mix "spice cake" flavor, and 12 ounces of diet cream soda- and that's it (the diet soda cupcakes recipe that have been floating around the boards). I bet you could also use the recipe you gave, and just substitute out the spice cake flavored cake mix for the vanilla. They came out really good- kind of like a cross between gingerbread and carrot cake0 -

I found the canned pumpkin where they have the pie fillings. The brand is "Libby's". Here in Texas the grocery store is HEB.:flowerforyou:0

you can also do spice cake mix (instead of yellow) and add only 1 can (15 oz) of pumpkin... dont add anything else and they taste amazing and bake up really well0

theres no way this information is correct. for example, the calorie count for an entire box of the cake mix ALONE (nothing added, just mix) is 1920 cal. (160 cal/serving; 12 servings per box) and that divided by 28 (the number of cupcakes she made) is 68 cal.0 -

I figured I should go back and double check the calorie count. I looked at the recipe I saved (on Sparks), It all looked right, so I re-enterred it. I found a different cake mix than the one I originally used (the original was still there, but there was a new one too). So I tried it with that. (The new said the mix was 1920 cal.) Here is the refigured information:
