Hmm, I'll have to try this version! Mine usually just involved a head of cauliflower, a few tablespoons of margarine, and a few tablespoons of sour cream, with some garlic powder/basil/pepper mixed in there, and it's pretty good that way, too. Only about 60 calories a serving, and the ONLY way I can eat cauliflower!0

I made this with dinnr last night and it was very good. My children liked it as well, even my 4 year old who doesn't eat mashed potatoes. Thanks for the recipe!!0

How long did you boil it? 30-45 minutes should be sufficient-- but even an hour should work.
The most important thing is to drain thoroughly. I let it sit in the colander for as much as five minutes. If it's too wet then you'll end up with runny "potatoes."0 -
This is so good...I've already made it 3 times. I double the amount so I can use the canned soup all at once. The only thing I do diffeent is that I bake it for about 30 or 40 minutes. Gets a little crust on it!!!!!!! Love it...0

I have thought about trying this before and have heard good things. I have never in my life had cauliflower and well...with my eating anxieties, I figured this would be an easy way to try something new. But I do have one question....has anyone tried it with any other cream soup? I'd like to try it with cream of chicken because I hate cream of mushroom. I may have to try this soon.0

I haven't tried it with cream of chicken because of the calories. I HAVE tried it with cream of celery, though, and it was very, very good. You can also use plain yogurt, but they're a little less flavorful so you'll want to really spice them up well.
