Shredded Chicken Breast mixed with the mashed avocado, diced cucumbers and a scoop of salsa. Eat on bread or a romain lettuce leaf.. YUM!0

Chicken, Cheese and Avocado grilled or toasted sandwiches but then I remembered you said 'no fowl'.

I have been eating them raw lately on my salads. However if you want to make some Guacamole then you can do the following. I am from New Mexico and this is how my famiily has always done it.
3 Avocados
3 roasted green chiles (or more or less, depending on how much you want to taste and how hot it is)
1tsp Garlic powder (or use 1-2 cloves of freshly minced cloves)
Salt and Pepper (whatever you like for taste)
2 TBSP low fat mayo (you can use sour cream, I like Mayo)
I roast the chile on the grill until the skin is bubbling, then sweat them in a bag for about 25 minutes, peel and chop. Mix the garlic with the chile. If you can't get whole REAL green chile then I am sure you can get Bueno or Hatch frozen chile at your grocer. This works fine, just doesnt taste as good and you can't get really hot chile.
Put everything else in a bowl and mix until guacamole consistency.0 -
1/2 avacado with an over easy egg in the pit over sauteed spinach and a few diced tomatoes!!0

I just discovered the greek yogurt and avocado when I ran out of non fat sour cream,add lime juice, stir and enjoy.0

Diced avocado and cucumber, add feta, fresh lemon juice, pepper. Makes a great side dish!0

I like to mash an avocado then add chopped yellow or orange bell peppers, tomatoes, lime juice, and whatever other veggies I have on hand/feel like throwing in, then using that as filling for lettuce wraps. yummy, low calorie, and SUPER filling0

This is how I make guacamole
2 or 3 Avocado smashed with the fork
1.5 or 2 tomatos sliced in cubes
3 Scallion/green onion/green shallots (only the white part and only 3 if they are like 2 centimeters of diameter, if they are bigger, reduce the quantity)
Mix it up and add:
- Pepper
- Salt
- Lemon, like less than a teaspoon
- Vinager, less than a teaspoon
- Tabasco less than a teaspoon
- Balsamic vinegar less than a teaspoon
- Oil (not Olive, the regular one) also less than a teaspoon
Enjoy with some corn chips
This is for like.. 4 people... If you want only for 1 or 2 people 1 avocado half a tomato and 1.5 green onion...0 -

half it, pit it, scoop out some flesh (eat that), wrap each half in foil and crack an egg into each "hole".
Bake for 15-20 min at 350-400 and top with cheese and salsa.0 -
Love it on crackers with salmon, in an omelet or in shrimp taco (yummy with zucchini). Also great in black bean and corn salad dressed with apple cider vinegar and oil. Any time you add and acid such as lemon juice or vinegar, it breaks it down into a delicious creaminess....oh avocados, how I love you!0

Made avocado chocolate pudding, used it as a spread/butter substitute, put on a sandwich with tomatoes, and I'm working on the rest... Wish there was more time in the day to eat!0

I eat two almost every day for lunch. I only have one recipe for them, but it's really good:
1. Wash.
2. Halve.
3. Pit.
4. Slice.
5. Peel.
6. Consume.

15 ounce can garbanzo beans drained and rinsed
1 avocado
1 clove garlic
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 cup olive oil
1 tablespoon tahini
Blend all in a food processor until creamy.
I love this recipe because not only is it super yummy and healthy, but you can store it in the fridge for up to a week and it doesn't turn brown0 -

I made Peach Mango Avocado Salsa today!
1 mango, 1 peach, 1 avocado, 1/2 an onion- all diced, except onion which you mince. Throw in some fresh minced cilantro and the juice of 1 lime. Salt and pepper optional... AMAZING!0 -
Recently made egg salad with avocados in place of the mayo. Add a bit of lemon juice, chopped chives and pepper. Yum.0

I like them diced in brown rice and organic salsa with grilled chicken breast or baked fish. And just straight up plain with sprouted grain bread alone or in just about any dish thats not breakfast. I LOOOOOOOOOOOOVE AVOCADOS0

I am kind of obsessed with avocado. I saw a lot of my favorite things already posted but here's what I had for lunch today.
Get about 1/4 to 1/2 of an avocado and mash it up. Spread on a piece of bread. Spread mustard on another piece of bread. Hard-boil two eggs and chop them up and use as filling for the sandwich. Voila, quick easy and healthy lunch! Not to mention DELICIOUS!0 -
I cut it in half, pop the seed out, sprinkle with a dash of black pepper and eat with a spoon directly out of the skin. You can also put a scoop of your favorite salsa in it and eat the same way. They are also good as a side dish with steamed or baked fish. Baked mahi makes a great burrito/taco and avacado is great on there too.0
