Okay, FINALLY convinced to resume my search for Shirataki noodles. I'm sure they're there, I just wasn't looking hard enough.

Shirataki are great for low carbers too! Awesome noodle alternative, as long as you rinse them for a while.

I've got some of those noodes, but wasn't quite sure what to do with them. This looks like a great option! Thanks for posting!

Here is a "cheater" pad thai recipe that I use all the time!

    Sauce (2 servings)

    2 tbs soy sauce
    1 tbs creamy peanut butter
1/2 tbs hot chili-garlic sauce OR 1 tbs sweet chili-garlic sauce
    1/4 tsp ground ginger
    1/4 tsp garlic powder
    2 tbs hot water
    hot sauce to taste (optional)

Wisk together sauce & let sit for a minute for flavors to combine -- pour over rice noodles or shiritaki noodles. Top with some bean sprouts, a few crushed peanuts (optional), and a lime wedge.

The whole thing takes only as long as it does to cook the noodles. With shiritaki noodles the whole thing is under 200 calories

I am giving the OP's recipe a try tonight... Finally remembered to check my grocery for these noodles last night and they actually had them!

I am really hoping the noodles are somewhat decent... I miss noodles!! Glad to hear the hints about rinsing them well... good to know.

So I made them that night.... Next time, I'll use a little more pad thai sauce, but I really liked them as did my son (who is 18 months)

My husband, however, couldn't stand the texture of the noodles... but I didn't mind it at all. I think I knew going into this that they were going to be chewy, after reading all the responses.... I didn't tell him they were different noodles beforehand (he gets hesitant to try things if he thinks its "diet" food) and he just couldn't get around the texture.

Came across these noodles at the store Saturday. I'm gonna go back and get some cuz I wanna make this as well as Fettichini (misspelled) Alfredo. Hope I like the noodle and more importantly I hope my family likes them so I can make more pasta dishes. YUM!
