I like to put tuna in mine. Its a lean meat but very flavorful. You hardly need any dressing. I am a huge caeasar salad fan so I'm pretty content with plain salads. Besides cheese or carrots, that's about all the extra toppings I use.

Baby spinach, reduced fat feta cheese, dried cranberries, walnuts, 1/4 avocado, and mix 1/2 tbsp olive oil with 2tbsp balsamic vinegar for dressing. I also throw in cucumbers and snap peas when I'm in the mood. Pretty high calorie, but very, very filling and loaded with all the good stuff.

    EVERYTHING.

avocado, diced turkey, goat cheese, orzo, olives, corn, black beans, tuna..............most leftovers from last nights dinner end up in my lunch salad :)

This is me too. I usually make enough dinner to have left over the next day. I have had peas, squash, zucchini, sauteed mushroom, peppers, & onions, etc all in salads.

Arugula (raw) is a great way to add a little extra flavor to a salad.

In general I like spinach, butter leaf or romaine lettuce, boiled egg, avocado, cherry tomatoes, nuts, and a homemade olive oil and balsamic vinegar dressing.

My salad for lunch today has 2 cups romaine and spinach lettuce, 1/2 green bell pepper, 1/2 red bell pepper, 9 cherry tomatoes, some shredded cheddar cheese, croutons for crunch, grilled chicken strips (3 oz) and Dorothy Lynch salad dressing. Delicious, filling and right around 400 calories.

I like grated raw beets with grated raw carrots. You can add protein (chicken, almonds, whatever) and whatever dressing you have on hand or make one up quick with some balsamic vinegar, olive oil, salt and pepper.
I could eat this stuff by the truckload! It's also a great add to a bed of mesclun or whatever for additional nutrition. I find that I don't crave the cheese and other things that really add up to a lot of calories when I eat this.

It's really simple and once you grate up some beets & carrots by hand or with the Cuisinart, they will keep in the fridge for a few days and you just add the dressing as you use it. Very portable as a salad, since this isn't as susceptible to the yech factor that greens get after they warm up and wilt.
