Bump, think this would be great in muffin form. Like little pumpkin custard tarts? I'll try it!

Okay, I've got this one in the oven right now except I used xylitol instead of splenda, so mine will be 149 calories per slice when cut into 6 slices.
  • Is it 5 Large Eggs? Just confirming.

    I used 5 large eggs.

Well, it's been in the oven over 55 minutes and it's still not done. My oven temp is very accurate, so I don't know what's wrong.

Okay, before you attempt this recipe, you should know this is not at all like pumpkin bread (the picture with the recipe looks like pumpkin bread, but this is not at all what this recipe looked like when I finished it). It's not even the consistency of a dense cheesecake or a pumpkin pie. This is more like a pumpkin souffle.

Also, it takes a long time to bake. I had baked mine for over 65 minutes (I stopped counting) when a toothpick finally came out clean.

After making two bad recipes today, I'm beginning to think it's better just to make a normal recipe and eat less of it.

Bump for later. And is that 123 calories per slice or for the whole loaf?
