Oh, zuchinni and summer squash. My favorite summer vegetables! I like to saute zuchinni in a little bit of olive oil until soft, though I recently tried steaming it and tossing with a drizzle of olive oil and some salt and pepper and that was delicious, too! Summer squash I usually cut into rounds, boil or steam until soft, and then mash with some buter (or butter substitute) and salt and pepper. You could also try cutting them into cubes, dippng them in your favorite marinade (Italian dressing works well) and grilling them in foil or on kebobs.0

Zucchini "pasta"! I love it! It is filling but much lower calorie than whole wheat pasta and very satisfying

Zucchini Quinoa Lasagna. Trust me, make this. My meat-loving husband actually requests this dish he loved it so much. He has NEVER done that with a vegetarian entree. Its amazing.

Ribboned Squash & Zucchini:
1 sweet vidalia onion
1 med zucchini (ribboned with potato peeler)
1 med yellow squash (ribboned with potato peeler)
1 TBSP olive oil
salt & pepper to taste
Instructions:
1) Sautee the onion with the olive oil
2) add the zucchini, squash, salt & pepper
3) Cook till tender (~3-5 min)
I love this recipe because it's very quick and easy to make, pretty (!!), and so easy to change up: sprinkle with some parmesean cheese, add some fresh herbs while cooking (I love rosemary, thyme & oregano), etc.
We do one similar to this! You can also use a mandolin if you have one with one of the attachments to make more fettuccine style "noodles" Very good cooked in a light tomato sauce!! Any meat, yum!
We also like to slice the long way a bit thick and marinate in fresh lemon juice, EVOO, fresh herbs and salt and pepper and grill over an open flame!0 -

I am eating a piece of zucchini bread as I type! My wife uses sugar and Stevia to help with calories. She put in Walnuts for flavor and protein. You will normally have to work a recipe around a little to your taste. Good luck!0

Zucchini Tots
Ingredients:
Squash - Zucchini, includes skin, raw, 1 cup, chopped
Onions - Raw, 1/4 cup, chopped
Parmesean Cheese Grated - 1/4 cup
Panko Bread Crumbs- 1/4 cup
Eggs - Whole, raw, 1 large
I put the onion and zucchini in the food processor so it's finely chopped. Mix everything together. Spoon by the teaspoonful into mini muffin tin (GREASED) Pat down with back of spoon. 400 degree oven for 20 minutes or until you notice them getting a beautiful brown crust on the edges. Makes 12 tots per tin.
I've made these - they're great- but use oatmeal instead of panko - soooo much better for you!0 -
You can make a zucchini lasagna. Use zucchini in place of pasta! Delish!0

Baked Zucchini Fries..
May family loves fried zucchini. This is a much lighter and very tasty atlernative.
Julianne the Zucchini (like french fries)
lighly sprinkle with garlic and paparika ( or I used seasoning salt)
dip in beaten egg & water or just egg whites
then in a shallow pan mix parmesan cheese, Panko style breadcrumbs, and a little more seasonings
coat zucchini with breadcrumb mixture
Bake in 425 degree oven for 10 minutes, turn them over and bake 10 more minutes
They will be lightly browned and crispy and so tasty, I served them with a marinara type sauce0 -

Although, all that sugar doesn't make it very healthy. I have substituted whole wheat flour, apple sauce, and brown sugar (in smaller amounts) for a slightly healthier "bread", with great success. Even my fiance likes it, and he is as picky as a child! XD

You should try Spaghetti Squash....just scrape the inside out and it comes out looking like spaghetti!!! Its a great substitute for the real thing and you don't need to worry about the carbs! I put homemade marinara sauce on mine!....0
