You should be able to enter the number of servings the recipe makes in the app when you add it. Then divide the food into that many servings (weighing and dividing is the best) and you can log 1 serving. Though taking total calories and then the percentage you ate works fine too.

Most items have the weight in grams listed after the volume measurement. My cereals say 3/4 cup (55 grams) and similar. Also, many of the MFP entries have grams as an option, so you can use those rather than ones that only list cups. You can set those numbers yourself if you know the amounts you want to hit. Just go into goals, then select "change goals" and then custom. The problem is that most entries and product labels do not distinguish between type of fat, unless it is saturated or trans, so those numbers are never right (kind of like potassium).
