I'll probably have a bowl of bean soup tonight (a cup of homemade pink beans to which I will add chopped spinach, turkey, pepita seeds, asparagus, mushrooms, raisins, grated parm and anything else I that sounds good).

Wow I have no idea what half of these things are but they sound yummy :D
I'm making baked large portobello mushrooms stuffed with stilton ( laughing cow so pretend lower cal version ) and chives and wholemeal breadcrumbs - haven't decided what I'm going to eat with them yet - maybe some roast chicken or baked salmon

Tonight we are doing barbecue turkey meatloaf with roasted brussel sprouts. I follow skinnykitchen.com's recipe for the meatloaf and just put the brussel sprouts in the oven with a little olive oil, salt, and pepper.

Soup and salad from a local restaurant. Or maybe one of the daily specials will tempt me. They have had a pretty delicious veggie pasta dish in the past :)

What is everyone making/having for dinner tonight? I can't make up my mind so I'm hoping your ideas will inspire me!

Well, my oven has been out for three days and I was sick of stove-top cooking (and I do not cook in my microwave....ever.)

So I spent the morning chopping wood and building a fire-pit and I just got done cooking a rooster we processed and had in the freezer, some sausage, a few potatoes from the garden, and the last of this summer's corn.

Now im trying to decide between bananas foster or honey-nut apples for dessert.

Grilled salmon with mix vegetables and mashed potatoes.. I take maybe four bites of the potatoes and that's basically it. Salmon I threw some lemon and orange juice directly from raw fruit slices on the fish so it was more fruity.
