I'm eating chicken breast baked in chicken broth and white wine with sun dried tomatoes, garlic and leeks. Pairing it with brown rice and asparagus.

London Broil with roasted potatoes...haven't decided yet between sauteed veggies or a big garden salad.

Mahogany Chicken Thighs. From Cooks Illustrated, so unfortunately the recipe is in the paid section, but this is one of the few paid services I would recommend. If for nothing else, the chicken adobo which is AMAZING!!

Edit: Actually, this recipe is close and just as tasty:

I have class until 9 pm tonight. So, that means snacking on apples and maybe another steamed turkey meat bun!

I was thinking about tuna melts from this site:

It seems pretty easy. Except I've never broiled anything. Could just put it in the oven for a few minutes.

You could, but it may not achieve the same beautiful bubbly brownness on top. If you have an oven, you probably have a broiler - I would just be careful the first time you use it to:

    1) Not put the food too close to the heating element
    2) Leave the oven door open just a tad (if you can)
    3) Don't turn your back on it
