    I made my own pizza tonight too:



    Fresh mozzarella, goat cheese, kalamata olives, pepperoni, red onion, and pesto. It was 800 calories though-- today was a hiking day.

    A quick pizza idea-English muffin, small amount of sauce and shredded mozzarella cheese sprinkled on top. Toast muffin, add sauce and cheese and pop it in the broiler so cheese melts.

    You might think this sounds odd, but it's the nicest pizza I've had in my nearly-50 years:

    Satay sauce, roast chicken strips, chargrilled de-skinned red capsicum slices, and mango slices.

    What kind of goat cheese is that? I'm really only familiar with feta, and that is obviously not feta(?) I'm planning on making my own pizza for the first time this week :)

    It kind of looks like feta-- it's soft crumbles. You get it next to the feta in the supermarket. Mine is Capricorn brand but only because that's what they had.

    When I make tortilla pizza I get a whole 12 inch tortilla size pizza for under 300 calories which is like one large slice of ordered pizza. Much healthier and I get to eat a lot more.
