I'm going to try meal prepping this week and want to incorporate sweet potato but I don't want to add butter. Does anyone have any other suggestions?

I just mash it with some cinnamon or I may add a little bit of coconut butter0

Just some cinnamon and salt....don't need to add more. We then just mash it. The kids love it.
We can then use leftovers on tacos or burritos etc...0 -
Coconut oil and cinamon0

I baked one today then cut it open and mashed a laughing cow cheese wedge in it along with a sprinkling of old bay seasoning. It was good.
I usually top it with some plain yogurt and hot sauce and whatever meat or egg I'm having that meal.0 -
Cottage cheese. I've heard peanut butter is good, but not tried it myself0

I know what you mean, potatoes and sweet potatoes are just not the same unless having a bit of butter on are they? I have been allowing myself a teaspoon to a teaspoon and a half of proper butter rather than do without or have a 'buttery' low-fat margarine. The satisfaction from doing this outweighs anything else and I just incorporate the butter into my daily or weekly allowance.

I saw someone on mfp recommend pb on sweet potato a month or so ago. I tried it and promptly became obsessed with the combo. I don't think I've eaten this many sweet potatoes in my life as I've eaten since trying it with pb.
I also add a little SF maple syrup so that it's easier to be conservative with the pb.

Cinnamon and mash it up.0

ALMOND BUTTER! Peanut butter...coconut almond butter, cashew butter....maple syrup0
-
Maple syrup... mmmmmmmmmmm (not sugar free)0
-
Teaspoon of brown sugar and cinnamon0

If you like it savory, I add black beans and salsa to mine. Or a dusting of salt, pepper, cinnamon, and ground red pepper.0

I limit the amount of sweet potato, then top with (measured) peanut butter and fresh or microwaved frozen blueberries. It's what I like.0

I like mine spicy so I cut into wedges and sprinkle seasoning over them and bake. My favorite seasoning is 1/2 tsp black pepper, 1/4 tsp cayenne pepper, 1/4 tsp smoked paprika, 1/4 tsp cumin, and 1/4 tsp garlic powder.0

I topped one with homemade chile con carne last night. OMG the combo of sweet and spicy was truly delish.0

White fleshed Japanese sweet potatoes with cinnamon, ginger and a little bit of light maple syrup for breakfast are my favorite or even with apple butter! ( no butter) Also sweet potatoes stuffed with vegetarian chile, or homemade BBQ sauce, black beans, or chick peas are so good! Or I also love Ms. Dash salt free Chile lime seasoning on them!
Additionally in the summers I like small orange fleshed ones with strawberries and blueberries for breakfast!0 -

I like them wedged, roasted and dipped in Sriracha.0

IMO almond butter is the BEST sweet potato topping. Also if you put in a little almond butter and marshmallow fluff and let it melt, then spread it, then top with some salt and cinnamon!!!!0

I must be weird because I love sweet potatoes plain.0

I mash mine with pumpkin pie spice and honey. I use less then 1 tbsp of honey for 2 very large sweet potatoes. A little salt and they are really good.0

Up until this post I've always just used I can't believe it's not butter light on my sweet potato... Wow this week is going to be fun trying all the new ideas considering I eat sweet potatoes at least 3 times a week0

I'll second the salsa sauce & black beans! I also like to top my sweet potato with tuna, chopped green onion, Dijon mustard & celery.

Peanut butter! (Careful - it's up to 100 calories per tablespoon / 16 grams.)
And if you're feeling creative: African Sweet Potato and Peanut Soup0 -

I love making mashed sweet potatoes:
Cut them into chunks and boil them. Drain and cool slightly. Add to food processor with some veggie broth, sour cream (use low-fat or fat-free if you want), red pepper flakes, salt, and whatever spices you like...
Last night, I boiled 1-inch cubes and instead of mashing them, I just mixed them up with some butter (1tbsp for 2 medium-sized taters), powdered sage, seasoned salt, red pepper flakes, garlic powder, and a few drops of white truffle olive oil. It was INSANELY delicious.0 -

Just because people like to eat other things doesn't mean they don't like them plain as well. The questioner asked what others like to add which is why people are giving those types of suggestions. I like adding some cinnamon and ginger to mine and even berries because they add antioxidants and additional vitamins.0 -
They are tasty cubed and cooked with smoked paprika salt and pepper with coconut or olive oil. Also good with avocado or salsa.0
