It was either the Caprese Chicken I made earlier this week or the Cashew Chicken I made last night. The Red Curry Chicken I made needed more spice. But the week isn't over yet and tonight I am thinking Steak Fajita's.0

Sunday, I hosted a gender reveal and made jalepeno peppers stuffed with sausage, cream cheese, and cilantro, then topped with shredded mexican cheese and baked in the oven. They're amazing!

It's a girl. She kept saying she'd have a boy, but i knew from the day of her first appointment, because of the high heart rate. So excited!2 -

Some cheese blintzes with a bit of powdered sugar. 570 calories but so worth it (but part of the reason I went a bit over yesterday, but I'll make up for it).0

New York strip steak from the BBQ, and sweet potatoes baked in the campfire when up camping this last weekend. So freaking delicious!0

Dinber at the in-laws. Ribs, chicken/bacon skewers, peas, carrots, baked potato, homemade rosemary bread, rice krispie squares and ice cream for dessert. Om nom nom.0

Homemade grilled pizzas and beer. They were so good on Sunday, so we are doing them again tonight. I make my own pizza dough and shape them into individual pizzas, then cook the dough on the grill for a few minutes on each side. The topped them with marinara sauce, ricotta cheese, mozzarella cheese, spinach, pepperoni, kalamata olives, banana peppers, onions and jalapeno peppers. Then throw them back on the grill to melt the cheese. YUM! Can't wait to have them again tonight! oh yeah... and the cold beer is waiting in the fridge too!1

Yep! It is super easy...
1 ripe mango peeled and diced
1 avocado cubed
1/4 cup of diced red onion (can use more, I'm just not a big onion person but it gives the salsa crunch)
1 jalapeno pepper seeded and diced (I like it spicy with the sweet of the mango, could do 1/2 jalapeno)
1 tbsp of minced garlic
1/2 cup of chopped fresh cilantro
Juice of 1 lime
salt and pepper to taste
Mix together gently with a spoon, if it seems a little chunky, add in a bit of olive oil to give it the right texture.
I make it a couple of hours before I plan to serve it as the flavors blend really well. I'm still eating it today and I made it Monday night, so it lasts a few days in the fridge.
I serve it over blackened fish, Jerk chicken or pork tenderloin, or crab cakes most often. Sometimes (today) I eat it with a spicy chicken sausage on a bun. It is also really yummy with cinnamon sugar pita chips!

Cinnamon/Raisin Bagel from Noah's w/ Nut's N More Chocolate PB, Trader Joe's mixed fruit preserves, and 1/2 banana. Had to shuffle all my carbs around but it was well worth it0

That sounds amazing! You layer everything and put it in the freezer before serving? Do you cook the snickers at all? I hate cake but this sounds like my perfect version of it.0
