    Eagerly waiting to see how much my team is going to go downhill now that I've stopped trying to get them to do their jobs. It's not my job to do that anyway... since they wanna screw me out of a promotion.

    @forward0backward Yes, I made this. I call it a Stove Top Frittata. Typically a frittata is started on the range top & finished in the oven But instead of firing up the oven during the summer, I just do the whole thing on the range. After the egg starts to cook & I've added everything, I cover the pan & turn the heat down really low so it slowly cooks all of the way through. It doesn't get quite as fluffy as finishing it in the oven, but it still just as tasty. Some times I will fire up the toaster oven on the broil setting with the rack as high as it will go & finish cooking the top half that way. I did that this morning, but you have to have a small enough pan to fir in the toaster oven. The handle will stick out, but I just close the door as much as possible to save as much heat as I can.

    It was really delicious. I actually added a lot more cheese & sprinkled it with Tabasco & Louisiana Hot Sauce. I took the pic before adding the other stuff because I have a volunteer side gig providing food pics to 3 food blogs. If they like my pics enough to use them, they will send me a few bucks for stuff they use. I don't even really care about that though. It just challenges me to improve my cooking & plating skills.
