One of my faves is a spinach and turkey omelette!
2 egg whites
1 large egg
1/2 cup of spinach chopped
2 slices of turkey lunch meat chopped
1/8 cup sharp shredded cheese
Mix all ingredients together minus the cheese, throw in the skillet, add cheese and cook like a normal omelette! Add a side of fruit and you have got a winning breakfast!!!0 -
Weekday:
My own "instant oatmeal": 1/2c quick oats, cinnamon, 1tbsp raisins, 1tsp brown sugar in a ziplock bag. At work I pour it into a bowl and add boiling water.
A couple hours later I have a Luna protein bar. Total cals is about 380.
Weekend:
2 slices of wheat toast with 1tbsp of either PB or jam (or both!)
2 eggs over easy, cooked in butter
2 slices of microwavable bacon (cooked in the pan with the eggs)
Total cals is about 500.0 -
Oatmeal, chia/flax/hemp seed mix, and pineapple, mango, and banana added. Tropical deliciousness:glasses:0

I had 366g of watermelon and 60g of blueberries and a black coffee (no sugar, no sweetener). Its my cheat meal tonight so kept breakfast and lunch as low cal as possible.0

Watermelon smoothie! I add a couple cups of watermelon, some frozen pineapple chunks, plain greek yogurt and ice and I blend it up! Super refreshing.0

don't usually eat breakfast, just have coffee....
This morning I did eat some eggs and a sausage patty along w/ coffee0 -
I made egg cups!
While they baked, I had a fiber one bar and a cup of coffee with nonfat creamer.
8 eggs
3tbsp bacos
2tbsp diced pickled jalepenos
Spray a muffin pan with cooking spray. I have one that holds 6 muffins, and this fit perfectly. If you add more ingredients (asparagus, mushrooms, tomatoes, tofu, etc) I'd use a larger pan.
Set oven to 375. I use a convection oven so maybe set it to 390-400 for conventional oven.
Mix 4 of the eggs with yolks, the whites of the other 4 eggs, and the mix-in ingredients. Whisk well. Pour in muffin pan divots all the way to the top. They will rise a bit as they cook and look kind of like popovers. I baked mine for 10 minutes then checked them. Then 7 more minutes in I poked each with a knife to open the tops and let the still-runny middles get more heat. I finished it off with 5 more minutes in the oven.
Super yummy and super filling. Each one is about 100 calories, only because I used part of the yolk in each one. Egg Beaters would make it better, but I use free-range eggs so I deal with separating the whites.
I'm a big fan of baking frittatas with spinach/leeks/peppers/tomatoes/apsaragus/etc. Pretty much the same as above but in a 8-9" cake pan. I add diced firm tofu to get more protein and stretch the recipe out. I eat that for breakfast, lunch, or dinner.0
