Going VEGAN, please help!

Ok, so after watching the documentary What The Health, I am going vegan. I have already given up milk, after seeing the poor treatment of the cows on dairy farms. I am seeking to speak with vegans only. Please if you are an avid protein fan, I do not care about the lack of protein. I am looking for people who actively and successfully eat vegan.
So what are your staples?
I pretty much eat the same thing day in and day out, so having variety is not important. However, at this moment, I can only see veggies and fruits. I was a low carber for a long time and rarely eat grains, unless its cereal.
Your help would be greatly appreciated. Also any recommendations for cookbooks would be a major help.
I do not have a budget for food, per se, however, eating organic and blowing money is not an option.

Vegans do not eat a lot of fruits. Instead they eat beans, lentils, chickpeas, tofu, tempeh in order to eat enough protein.
Search in Groups for people doing plant based.13 -

I'm not a vegan but healthy vegans get adequate protein because protein is essential for good health. Do your research.12 -

I really hope this is the case. Anyone who has done even an ounce of research into nutrition should be able realize how much B.S. they were actually able to pack into this movie. Most of what is said is extremely misleading, and some of it is just outright wrong.20 -

I was vegan for years a long time ago, but have two good friends that are avid 'veganeers' (no dairy, meat, honey, the whole 9 yards). They eat a lot seitan, tofu, and legumes with their vegetables.
One is a semi serious chef, and makes lots of cream sauces with raw cashews and stuff like that. I've also dabbled with tofu mousse's, pies, etc., which have all turned out great.
I personally think the processed vegan stuff is nasty (think tofurkey, and products like that), but that's just me. Keep things simple if you are starting off.
For example, make a pesto with olive oil, basil and garlic for your pasta. Use vegetables and vegetable broth seasoned with spices (garlic, ginger, green onions) and make homemade ramen (not the packaged stuff). Throw in bok choy and spinach, carrots and such.
Learn how to buy the right tofu for the right means (i.e. extra firm for stir fries and soft for desserts), learn to cook tofu the right way (tons of online resources). If you can get tofu down, then move to seitan. You can make the stuff taste amazing with the right ingredients.
Moral of the story, experiment and don't be afraid to try vegetables you never would have tried.14 -
Hi! I'm vegan! Don't worry about protein plants make protein you're just cutting out the middle man! A lot of false info going around as vegans get plenty of protein. B12 is the only supplement I take. Be sure to read up on that. I eat a lot of beans, hummus, raw veggies, fruits, brown rice, almond milk, healthy smoothies and nuts. I try to stay away from added sugar and processed foods as much as possible. I feel amazing. You may go through a detox phase first week or two where your stomach does wonky things but hang in there it does straighten out then you'll feel amazing! Feel free to friend me or pm me if I can help you on this journey. Be careful there is a lot of vegan junk food out there that can cause weight gain. The closer you stay to its natural state the better!27

He then uses this as a trump card when calling different American health agencies, and when the very first person who picks up the phone at each agency(most likely a receptionist) tries to explain that they're not the proper person to ask these questions of, the narrator goes "well see here, these agencies won't even answer my questions". It's so transparent it's actually pretty embarrassing.
At one point in the movie, one of the doctors even says "carbohydrates cannot cause you to gain weight in and of themselves because your body can store them as glycogen or use the glucose in the blood stream." That is just a completely inaccurate statement and that doctor should be ashamed that he ever said it.26 -
I've been vegan for ten years.
Going vegan doesn't require eating no protein. Saying you don't care about not getting an essential macronutrient indicates that you may want to do some more reading about vegan nutrition. Vegans get protein from many sources, including beans, grains, vegetables, tofu, tempeh, and seitan. It's completely possible for vegans to meet their needs for protein or even have a high protein diet (if that's what they want).
My personal staples include the following: cashews (great for making "cream" for sauces), almond milk, cabbage, jalapeno peppers, blackberries, potatoes, onions, pasta, rice, oats, hot sauce, canned tomatoes, vegan jerky, roasted seaweed, black beans, chickpeas, lentils (brown and red), quinoa, olives, avocado, coconut (oil, milk, flakes), vegan mayo (Follow Your Heart and Hampton Creek are both good brands), seitan (I typically make my own, but Upton's Naturals is a good brand), jackfruit (canned), tofu, tempeh, greens (my favorite are collard greens), apples, and corn tortillas.
I have found Pinterest to be a great source for recipes. If you're looking for cookbooks, some of my favorite cookbook authors are Isa Chandra Moskowitz, Terry Hope Romero, Bryant Terry, Celine Steen, and Robin Robertson. There are vegan cookbooks for just about every cooking style, so if you share some of your favorite styles of cuisine, I may be able to recommend a specific one (I have tons of vegan cookbooks that I use frequently).23 -
We have wonderful, very high end gourmet vegan restaurant here in downtown Atlanta. While I'm not a vegan (semi-vegetarian or pescetarian), I am amazed at the wonderful dishes like creamy curry with tofu and vegetables over jasmine rice and seared mushroom steaks and desserts that are absolutely delicious. Their vegan chocolate cake (with tons of chocolate icing) is to die for! Eating vegan does not have to mean being limited to a diet of sprouts and wheat germ. Explore vegan recipes online (there are 1000's of them) and explore the vegetarian or "health" section of your local grocery store and try some things. You don't know until you try something whether you will love it or hate it. All of that said, calories are still calories so don't fool yourself thinking that eating vegan won't pile the pounds on....it will. There are plenty of fat vegans and vegetarians out there.6

I'm not vegan so you might not take any notice of my post but I just had a lovely chick pea and potato curry.
25g Maysan curry paste, it's vegan
The below is per serving
I chopped up 120g mushrooms
Half an onion
3 spring onions
2 handfuls of kale
1 carrot spiralised
garlic pureed
Chilli powder
Chilli flakes (I like my food very spicy)
56g black chick peas
196? gram of potatoes, cooked in their skins then crushed as a rice replacement.
I have vegan friends and I make this quite often when they come.7 -
Just wanted to ask a piggy back question off this post, what is everyone favorite vegan protein bar? I was looking at the "no cow" bars in GNC and some of the flavors looked good but I am hesitant since I am new to this. Also has anyone tried the "Olly" vegan protein powder? I was thinking about trying that as well. Thanks!

Kricar86 great website/blog to use is Fatfreevegankitchen .... might be just fatfreevegan either way you'll find it if you just google it. Great website for recipes! Breaks down nutrition info on each recipe too. I did the whole vegan thing for about a year and a half...lost 122 pounds doing this. Was able to love eating veggies by doing this1

My favorite is probably Clif Builder Bar (most of them have about 20 grams of protein). They're not high protein enough for me to consider them a protein bar, but I also enjoy the new Clif Nut Butter Filled bars (they have about seven grams of protein, I think).2 -

I've had the now cow bars.... not bad tasting but I'm an avid lover of Quest so for me I find nothing compares lol1 -
