    Great ideas here!

    Mexican is my go-to. Tonight was:

    -shrimp in tomatillo sauce

    -cauliflower rice (the frozen one from Trader Joes for around $1.99-- so much easier than ricing it yourself!)

    - black beans (in a salsa and chili seasoning sauce)

    - Lettuce and fresh tomatoes

    - Plain greek yogurt (in place of sour cream)

    Leftovers tonight! I have chicken fajita pasta, vegetable beef soup, and creamed chicken in the fridge. So some kind of mixture of those things, haha.

    • Grilled chicken seasoned with salt, pepper, and italian seasoning;
    • Birdseye steamfresh broccoli and cauliflower topped with grated parmesan; and
    • Barilla ready pasta w/ garlic butter.

    Entire meal takes about 10 minutes to prepare.

    Too bad I just got finished cleaning up the kitchen. No pic to show.

    Homemade cauliflower soup to start, barbeque-style chicken breasts over roasted sweet potato chips and cauliflower pieces, side salad (tom, cuke, green pepper).

    The soup was a slow-cooker version. The chicken was marinated, then baked over the already-roasting veggies in an open pan, finished by broiler to add a touch of goodness.

    Could you explain how you roasted your veggies and which vegetables you used? (Something looks like olives to me.) The entire meal looks delicious!
