Thanksgiving desserts?

I'm in charge of desserts two days in a row (Thanksgiving and Black Friday) AND I won't be able to use the oven on Thanksgiving either, so I would love some ideas of recipes that can be done 1-2 days ahead...

My husband's requesting a pumpkin pie so that's on the list for Thursday, I was thinking cheesecake for Friday (any favorite recipe?), but I'd like something else for Wednesday (or a couple more things) and I'm a bit at a loss. Some fruit dessert (someone wants cobbler but I'm not sure it keeps well?) and/or another cheesecake.

Suggestions?

Definitely not looking for low calorie recipes so don't even suggest those.

    A classic New York cheesecake is always lovely. If you want to get creative, there are lots of options. Pumpkin cheesecake, raspberry, chocolate swirl, caramel apple...

    I am doing mini cheese cakes for Thanksgiving.
    Super simple and you can make any variety.

    Peanut butter pie. The recipe I use is a refrigerator pie so you don't need the oven at all. Sweet potato pie is good too. You could bake it a couple of days ahead, but it is very similar to pumpkin. And you can never have too much cheesecake.

    I am in charge of dessert too and my in laws (our Thanksgiving people this year) don't like most pie. So, I am making Maple Sugar Cookies and a Cookie Butter Bundt Cake.

    An apple or spice cake? Salted caramel brownies? I get so tired pumpkin in everything.

    Apple cake is a good idea. I think an apple dessert is necessary and normally do pie, but if you don't want two pies.

    Apple crisp? I don't know how long it keeps as my family devours it right away.
    Something like key lime or French silk pie might work.

    I asked my friend what his favorite pie is so I guess I'm making an apple pie too.

    Now I need to figure out what cheesecakes to make. I was thinking caramel/pecan for one but I'm not sure for the second one, lol.

    Maybe something with cranberries? Like a cranberry/orange sounds good.

    How about Tiramisu ? There are various different forms of it, but it can be made without the use of an over and is a very popular Italian dessert plus offers something a little lighter (not calorie wise, just in terms of density) and is different to the usual pies and cheesecakes.

    my favorite is lemon cheesecake. Im making a big old monkey bread for thanksgiving morning but mom is in charge of dinner. I do xmas.

    I made this instead of a pumpkin pie last year and was kind of nervous that it wouldn't come out right..But, it was so good that I had to make it a few more times! It's perfect to make a few days early so it can set up in the fridge. So Yum!

    I used to get those little mini graham cracker crusts and fill them with the Philadelphia cheesecake filling and then top them off with fruit. They were individual and customizable.

    My husband just really wants pumpkin pie, even though I made one 3 weeks ago. Bah. I've made a few things from her site and absolutely loved them though, and I'm quite sure that recipe is in my bookmarks already!

    Oh those look tasty (without the raisins in that first one, lol).

    Oh, I think I'm making these. I'm weird in that I just really don't care about pumpkin pie (I LOVE fruit pies, on the other hand), but love making other things with pumpkin and winter squash and am always up for a new idea.
