Thanksgiving desserts?

I'm in charge of desserts two days in a row (Thanksgiving and Black Friday) AND I won't be able to use the oven on Thanksgiving either, so I would love some ideas of recipes that can be done 1-2 days ahead...

My husband's requesting a pumpkin pie so that's on the list for Thursday, I was thinking cheesecake for Friday (any favorite recipe?), but I'd like something else for Wednesday (or a couple more things) and I'm a bit at a loss. Some fruit dessert (someone wants cobbler but I'm not sure it keeps well?) and/or another cheesecake.

Suggestions?

Definitely not looking for low calorie recipes so don't even suggest those.

A classic New York cheesecake is always lovely. If you want to get creative, there are lots of options. Pumpkin cheesecake, raspberry, chocolate swirl, caramel apple...

I made some caramel apple cheesecake bars for a work bake sale and they were a hit. The recipe was similar to this one: https://www.the-girl-who-ate-everything.com/2010/09/caramel-apple-cheesecake-bars.html

Peanut butter pie. The recipe I use is a refrigerator pie so you don't need the oven at all. Sweet potato pie is good too. You could bake it a couple of days ahead, but it is very similar to pumpkin. And you can never have too much cheesecake.

I am in charge of dessert too and my in laws (our Thanksgiving people this year) don't like most pie. So, I am making Maple Sugar Cookies and a Cookie Butter Bundt Cake.

Apple cake is a good idea. I think an apple dessert is necessary and normally do pie, but if you don't want two pies.

Apple crisp? I don't know how long it keeps as my family devours it right away.
Something like key lime or French silk pie might work.

I asked my friend what his favorite pie is so I guess I'm making an apple pie too.

Now I need to figure out what cheesecakes to make. I was thinking caramel/pecan for one but I'm not sure for the second one, lol.

Maybe something with cranberries? Like a cranberry/orange sounds good.

How about Tiramisu ? There are various different forms of it, but it can be made without the use of an over and is a very popular Italian dessert plus offers something a little lighter (not calorie wise, just in terms of density) and is different to the usual pies and cheesecakes.

I made this forgotten recipe once for Thanksgiving or Christmas (can't remember which) and it was delicious. You may hate Jefferson Davis, but you'll love his pie!

Canadian butter tarts are ridiculously good, too:

Another excellent dessert to top off a Thanksgiving meal, this one from Australia (at least I know they make it in Australia):

I made this instead of a pumpkin pie last year and was kind of nervous that it wouldn't come out right..But, it was so good that I had to make it a few more times! It's perfect to make a few days early so it can set up in the fridge. So Yum!

I used to get those little mini graham cracker crusts and fill them with the Philadelphia cheesecake filling and then top them off with fruit. They were individual and customizable.

My husband just really wants pumpkin pie, even though I made one 3 weeks ago. Bah. I've made a few things from her site and absolutely loved them though, and I'm quite sure that recipe is in my bookmarks already!

Oh those look tasty (without the raisins in that first one, lol).

Keep the recipes going! (I think I know what I'm making but I can always bookmark for later)

Oh, I think I'm making these. I'm weird in that I just really don't care about pumpkin pie (I LOVE fruit pies, on the other hand), but love making other things with pumpkin and winter squash and am always up for a new idea.

Paula Deen's Pumpkin Cheesecake is so gooooood! : http://www.pauladeen.com/pumpkin-cheesecake

I made a Pumpkin Trifle that was a bit hit. I "sorta" used a recipe (not the gingerbread one).....I started with a dense pumpkin cake (using a mix, eggs, oil & pumpkin puree)....cut it into cubes. Jello makes a cheesecake pudding mix & a pumpkin spice pudding mix......I used one of each and Cool Whip. I questioned the toffee bit sprinkles, but they were really good.

I see someone above already mentioned it but my vote is tiramisu. It needs to sit for a day or two so it's the perfect make ahead. People will likely already have their fill of pumpkin, apple, etc so it's nice to offer something different, plus it's incredibly delicious. I'm either going to make that or bread pudding.

Got to throw this Pavlova in to the mix.
Of course you can use whatever fruit you wish.

For Christmas Me and my DIL make the Pavlova for Christmas Day then use the leftover egg yolks to make a Cointreau chocolate mousse for Boxing Day.

    Cheers, h.

I recently found a great (and easy) cheesecake recipe! Cookie dough (of your choice...I used a roll of Nestle chocolate chip) as the crust, a block of cream cheese, .5 c sugar, one egg beaten for the filling, and as much cookie dough as you prefer scattered on top. Bake at 350 for 30 minutes and let cool.

I'm making three desserts, all of which need to be made a day ahead so they can cool and set.

I started thinking lemon meringue, then settled on lemon cream cheese pie http://www.geniuskitchen.com/recipe/kittencals-lemon-cream-cheese-pie-107621

    Pecan pie http://www.karosyrup.com/Recipe/Classic_Pecan_Pie

    and

Pumpkin cheesecake with gingersnap crust and caramel sauce. It's pretty much this recipe for ingredients, but instead of cooking the filling on the stove, you just mix everything together in the mixer. This author took the standard recipe and turned it into something that is way too much work. And the caramel sauce is just brown sugar, butter, cream and dash salt - no lemon or Karo syrup.

I always make a pumpkin cheesecake. I also love pecan pie and apple pie with a crumble topping.
