How do you eat your veggies?

I started off only eating salads to get my veggies in. I wasn't used to eating them, now I love them!
Omelettes and pizza are a great way to add in veggies.
I have a few smoothie recipes using mostly veggies that's pretty tasty.
Roasting, grilling or sautéing veggies and eating them as a side dish.
I love making veggie frittatas.
Casseroles are an easy way to sneak in more veggies.
Making veggie based sandwiches, subs, quesadilla and I make my own veggie burgers.
I create sauces and purée bases out of them.
I'm sure there are more ways that are not on the top of my mind, but I have a lot of diverse ways of getting my veggie intake in everyday.

I mostly roast my vegetables, unless I'm doing some kind of stir-fry. I never steam them. Also I hide extra vegetables in everything. My SO is a little picky about vegetables so I usually dice about half of the vegetables really small or blend them into a sauce in some way to up the vegetable quantity undetected.0
