I just ate 1/2 a package of there. If they didn’t have calories I’d go back to the store and buy them out0

Here you go:
Cast-iron corn stick pans and a cast-iron "cornbread triangle" pan. Melted butter in the hot pan sears the crust to make it super crunchy and buttery. I use a mix of cornmeal, corn masa, and polenta with just a little whole wheat flour and, of course, buttermilk. This batch didn't have fresh corn, but it did have hot chilies. I like it dense and savory rather than cake-like and sweet. Nobody is surprised about that.

@Noreenmarie1234
You might be surprised that you don't need or want any more butter. In addition to the butter in the bottom of the pan that sears the crust, I open the oven about five or ten minutes before it's done and gently rub a stick of butter over the top of every single piece. It makes the top even more tasty, and the butter seeps deep inside.
If you had some pepper jelly (red, green, or both), I'd say that would be the perfect accompaniment.
They are best after a brief rest on a cooling rack so you don't burn your mouth but when still crispy. Store in a paper bag if there are leftovers (ha ha ha). Pop in a toaster oven to recrisp the next day. Or crumble and use for stuffing....1 -
I packed up care packages for two sets of neighbors. Both sets are happy. I am happy too because I now have less than half the batch to binge on because, contrary to popular opinion, they do have a few calories. Like no more than ten calories each, right?
I have enough ingredients to make another batch in a few days if I wish. I probably will. So tasty. By then people will be ready for more.

I am so jealous of your neighbors!1 -
I'm going to make another batch later this weekend. Come get some! Some is already spoken for. It would be fun if I only saved two sticks for myself and maybe one triangle and gave the rest away. This batch turned out pretty good in spite of me rouging it with the recipe.1

That should work out well. I made some squid today and it had me longing for paella. That and grilled whole fish and a big pile of conch, fish, and shrimp ceviche.

Not a lot of calories in grilled whole fish though, you could fit that in. I've never tried conch.. Im not even sure what it is
