Shelled edamame recipes?
I am trying to clear out the freezer.
We have a bag of shelled edamame that has been around forever. I think I originally intended to use it as a replacement for double shelled broad beans in that Spanish tapas classic of broad beans stir fried with finely minced bacon and shallots. Still think that would be a rather nice thing to do with them, but any other ideas as I have quite a lot of the stuff?

Like you, I had some extra edamame once that needed eating. I threw about 200-250g of it, a little extra chicken broth and about a tablespoon of curry powder into https://skinnytaste.com/cream-of-zucchini-soup-1-ww-point/. The edamame upped the protein and made the soup a little heartier. Everyone in my house really liked it.2

I guess I am pretty simple. I throw a cup of frozen edamame in my lunch container when packing it in the morning. I heat it up for about 3 minutes. I love them just like that...had them today!!4

Personally, I like them as a snack with a little soy sauce and rice (or malt or apple cider) vinegar, and a sprinkle of coarse salt.1

We use them in quick stir fry meals for a protein source, usually with noodles, mushrooms, zucchini & green onion. My husband includes them in homemade fried rice sometimes also.

You can make dip out of edamame, though my favorite thing is just to roast it with some smoked paprika until it’s crispy.3

I had the same thing, edamame in the freezer at a surplus, a couple of months ago and made this dip/spread.
I put it in jars and made my first attempt at water bath canning (successfully). It’s so good on crackers, or pretty much anywhere! Where the recipe calls for chilli paste I used a generous dollop of homemade harissa.
I’ll definitely use the recipe again when I’ve used up the batch.1
