Was really run down, so didn’t make it to the grocery store yesterday, meaning no eggs for our usual Dutch baby Sunday breakfast.
Decided to try a recipe for Irish soda bread from a British cookbook. Didn’t have “live culture probiotic” yogurt, so used regular Greek. Didn’t have enough buttermilk, so added half a cup of skim, and a tablespoon of lemon balsamic vinegar, because…. Vinegar + skim makes a buttermilk substitute right?
We like a sweet breakfast treat for our Sundays. She suggested adding a jar of orange marmalade and zest, but I had one of (very) bitter lemon marmalade I wanted to use up.
All in all,with a little margarine spread and some lemon curd, not bad for a first attempt. Would do again, but I have a very fast oven, so def need to make adjustments for that, and would do it on an air-bake pan rather than my usual go-to cast iron pizza/biscuit pan.
Nice change of pace. I can see why it’s a peasant bread. Wildly filling for the day ahead!
Now to go log it and see the damage, although I don’t really care on Sunday mornings. Sunday dinner is typically very light: steak, shared potato and small salad.
Hope you all are enjoying as peaceful a morning as me! Cats snoring, Dog is snoring. Coffee beside me. Rain threatening (yay!!!!) Only thing missing is the sound of someone leafing through the Sunday paper. Instead, it’s the gentle tap of doom scrolling.

Typically I have an egg and Americanos. Because I worked out this morning, I included and English muffin and converted my Americano to a cappuccino. I am living wild this morning.

213 calories and i am very full. previously i would have stopped and grabbed a farmers breakfast bagel at Timmies with a double double coffee about three times the calories and explains my cholesteraol numbers since i ate that 5 days a week

Good grief!
Just the eggs and butter alone would be 70% of my daily allowance of saturated fat, and I have to keep an eye on my cholesterol levels. I had a glass of orange juice and a cup of rooibos tea. I thought about having porridge, but decided I didn't need it or anything else.
I've had a bowl of lentil soup for lunch and am about to prepare kedgeree for dinner. For supper I'll have raspberries in Greek yoghurt with maybe some honey.
