I like the idea of stuffing as a binder.
I have enjoyed using craisins in salads and in savoury dinner ways. Picked up some dried figs pieces to explore.
We are having blazing hot days. Dinner tonight was snackish - Random cold food fridge raid - 8 mini toast squares with red pepper hummus and variety of cheese; blue, swiss, brie, cheddar. Chilled nectarine and a mixed berry yogurt drink.

Turkey sandwich and 1/2 a large nectarine.

I went freezer-shopping tonight and pulled out some taco beef and black beans. Threw it over half the tortilla chips I would usually default to, with a little cheddar and lots of salsa. I had a single triangle of Toblerone chocolate for dessert. Perfect!
My doc told me to cut out the carbs and I'm finding my addiction much more entrenched than I ever expected. Instead, I'm trying to reduce using the AA maxim of "one day at a time!" And when I can't reduce, I switch to whole-grain carbs. My weight loss is glacial, but I find I feel better overall.

One day, 1 meal/snack choices at that time, then put away until time again works better for me too... When I fret forever, I get overwhelmed with it all..
Dinner - cold tuna sandwich & chilled plum

Bran buds cereal mixed with harvest crunch granola and almond milk.

Ramen with leftover tofu(seasoned with pork rub), pineapple, and cashews / supergreens salad

Breakfast for dinner tonight..waffles, cantaloupe, and turkey sausage.

Long run tomorrow, so dinner is whole wheat spaghetti with lean ground beef in the sauce. Some extra fresh tomatoes and zucchini from the garden blended up in there, too.

Slice of veggie pizza and salad with chickpeas and pickled beets

Tofu Tuesday...some sort of tofu dish. Probably tofu tacos 🌮

Still hot, so cold foods today...
Yogurt & blueberries, coldbrew coffee.
Tuna on thin slice bread, cut watermelon lunch.
Coldcut meat & cheese rollups around asparagus, sliced into rounds on crackers.
Maybe popcorn dusted with blackening seasoning, grated parm and bbq flav nutritional yeast for a snack.

trying a new recipe for stuffed bell peppers …I typically would use a ground meat as most of the stuffing.. but tonight -using diced shiitakes, cauliflower, butternut squash and additional mixed veg as the stuffing… stewed in tomato sauce…

Planning my favorite salad-a steak salad with pears and gorganzola cheese and crispy sugared pecans tonight with raspberry vinegarette (and whole wheat rolls with butter) 😋

A savory yogurt/soupy chicken salad(?)
Greek yogurt, chicken breast, cucumber, onion, garlic, dill, salt and pepper.
I used extra yogurt because I was finishing up a tub and didn't have as much chicken as the recipe called for so...
