Laughing Cow Alfredo

4 wedges The Laughing Cow Light Creamy Original (I used the light garlic & herb flavor)
2/3 cup skim milk (I used 2% because that is all I had)
1 Tbsp fat free parmesan cheese
1tbsp smart balance light
6 cloves minced garlic (I used less because the cheese was garlic and herb)
1C 1% cottage cheese
1C roasted red peppers (I did not use red peppers because I didn't have any)
2C broccoli
1boneless/skinless chicken breast (I used 3 - 4oz chicken breasts)
1 box Whole Wheat Rotini pasta

Instructions

In a medium-sized saucepan, combine all the ingredients over a low heat, until everything is melted and the sauce is velvety smooth, about 20 minutes. While sauce is cooking, cook the pasta, chicken, broccoli. Then mix it all together!

I put it in the recipe calculator as the entire thing serving 6 people and it came up with this...

Fiber - 8
Fat - 5
Sodium - 518
Protein - 25

    I agree, this sounds absolutely delish! Oh, I bet this would be great with spinach as well............I just love to modify recipes:laugh: I came up with 7 - 1 cup servings at 286 cals per serving....................no other nut. info. ....did not have time. What a great dinner idea!

    Choices were slim for lunch today since all the meat was frozen.

    So, I dug out the Healthy Harvest pasta, and used 2oz of that for 180 cals. Then, I added 2 wedges of Laughing Cow Light Herb and Garlic cheese, and a splash of milk. Heated it, and it was SO good. I could easily have this as a favorite meal so far.

    It was only 250 cals.
