i use a cup of that pasta ( usually we have leftover cooked in the fridge) and microwave it with a wedge and half a tomato cut up for 2 minutes then stir it up and sprinkle with the light parmesan style topping and its sooo good

Laughing Cow Alfredo
4 wedges The Laughing Cow Light Creamy Original (I used the light garlic & herb flavor)
2/3 cup skim milk (I used 2% because that is all I had)
1 Tbsp fat free parmesan cheese
1tbsp smart balance light
6 cloves minced garlic (I used less because the cheese was garlic and herb)
1C 1% cottage cheese
1C roasted red peppers (I did not use red peppers because I didn't have any)
2C broccoli
1boneless/skinless chicken breast (I used 3 - 4oz chicken breasts)
1 box Whole Wheat Rotini pasta
Instructions
In a medium-sized saucepan, combine all the ingredients over a low heat, until everything is melted and the sauce is velvety smooth, about 20 minutes. While sauce is cooking, cook the pasta, chicken, broccoli. Then mix it all together!
I put it in the recipe calculator as the entire thing serving 6 people and it came up with this...
Calories - 365
Fiber - 8
Fat - 5
Sodium - 518
Protein - 25
ETA - I wanted to give the credit to Jenhodges13 as she is the one that gave me the recipe!
I have made something similar in the past but used plain Greek yogurt in place of the laughing cow and milk. The yogurt gives a nice flavor and consistency to the sauce. I will certainly be trying this method though.0 -
