I love tuna cakes!

1 can tuna

8 crackers

1 egg

lemon pepper



smash the crackers; mix all the ingredients together well, form patties (I make about 4), and fry. De-lish!

    Sweet Chilli Chicken & Noodle Salad

    Chicken Breast
    Vermicelli Noodles
    Snow Peas
    Sweet Chilli Sauce

    Cook chicken breast. Shred snow peas. Cook noodles in boiling water, drain. Put everything in a bowl with sweet chilli sauce.

    Curry lentil soup

    1/2 bag lentils
    One small onion
    48oz veggie broth
    1Tbs curry powder

    Cook onion till translucent.. add broth and lentil and curry powder. Cook till lentils are done.

    Half of a cleaned out jalapeño pepper
    Stuffed with baked sweet potato or yam
    Topped with a piece of jumbo shrimp
    Wrapped in piece of bacon
    Baked at 375 for one hour

    4g fat
    6g carbs
    6 g of protein

    Top it with Sriracha sauce for fun

    Creamy Pasta

    For 1 serving:
    1.5 ounces dry pasta, cooked (I use penne)
    3 small tomatoes, chopped (cut each into about 8 pieces), then baked at 450 for 20 minutes
    1/2 cup low fat ricotta
    ~1/4 cup of chopped fresh basil

    Place cooked pasta in bowl, add cooked tomatoes and ricotta, stir. It's helpful to heat the mixture in the microwave for 70 seconds or so--the ricotta cools down the tomatoes and pasta. Add the basil and stir. Then eat.

    This is really creamy and tasty. You could add some chili flakes instead of the basil. Or both (but that's 5 ingredients).

    Greek yogurt (Fage 0% or 2%)
    Honey
    Almonds (or flax seeds)

    My recipes change all the time but right now my favorite is: Homemade pizza
    Ezekiel sprouted grain tortilla (150cal)
    crushed tomato with garlic and basil from a can(20cal,approximately)
    fresh spinach leaves
    crumbles of goat cheese (very little)
    shreds of low fat mozzarella cheese (very little)
    Make it like a pizza, bake at 375 until cheese is melted and crust is crunchy.

    1. Portobello Mushroom Cap
    1 tsp, Tastefully Simple Balsamic Dipping Oil
    1 Slice of Cheese

    Optional:
    Bun ,lettuce, onion, pickles, tomato, etc.

    Take the mushroom cap and rub the dipping oil on both sides and let it rest at room temp for 20 mins. then grill (you can pan fry if you like, no extra oil needed) and then top with a slice of cheese. Delicious!

    If you prefer to have it as a burger, add a bun and the veggie you normally like on a burger. So yummo!

    Salmon filet (I always use wild caught, but it may not matter)
    Olive oil
    Sundried tomato pesto (Classico)
    Spinach

    Sauté or bake the salmon with some olive oil, approximately 5 minutes.
    Sautée the spinach with olive oil, also approximately 5 minutes.

    Top the salmon with a spoonful of the sundried tomato pesto.
    Serve with the spinach.

    The salmon is also good with Swiss chard and broccolini.
    Yum! This is one of my favorites. I make it at least twice a month.
    Some may want to add a little salt and/or a squeeze of lemon juice.

    Chicken, salsa, Dijon mustard, and lime juice. Marinate the chicken in the other three ingredients, then cook it as you please. I've been using this since before I cared about eating healthily.

    extra: stevia and cinnamon

    mix everything but the pb together and freeze for an hour
    top with melted peanut butter :)

    Coconut chicken curry

    Chicken breast, cubed
    Curry powder, to taste
    Can diced tomatoes
    Can lite coconut milk

    Brown chicken off with curry powder, then put it and the other ingredients in a big pot and simmer. I use this as a base for many variations - I often add garlic and onion, and then any veggies I have lying around (broccoli is awesome in it!) Serve on rice. I like to have it on its own though.

    1 box - Pillsbury Sugar Free Devil's Food Cake Mix
    10 oz - Fage 0% Greek Yogurt
    6 oz - Sugar Free Cherry Pie Filling
    1/4 cup - Chopped Walnuts

    Mix together by hand and bake in a muffin pan to make 12 moist & delicious yet nutritious muffins!

    154 Calories, 17g Carbs, 5g Fat, 5g Protein per muffin
