    Sure, it's really simple...

    Orange Carrot Cornmeal Cookies

    INGREDIENTS

    1/2 cup (1 stick) unsalted butter, room temperature
    1 cup confectioners' sugar
    1/2 teaspoon pure vanilla extract
    1 teaspoon packed finely grated orange zest
    1 teaspoon coarse salt
    1 cup all-purpose flour, (spooned and leveled) <----I substituted with almond flour to make it Gluten Free
    1/2 cup fine cornmeal
    1 medium carrot, grated on small holes of a box grater (about 1 cup)

    DIRECTIONS

    STEP 1
    Preheat oven to 325 degrees. In a large bowl, mix butter and sugar with a wooden spoon until pale and fluffy. Stir in vanilla, orange zest, and salt. Add (almond) flour and cornmeal and mix until mixture is crumbly. Add carrot and stir until a thick dough forms.
    STEP 2
    Drop dough by rounded tablespoons, 2 inches apart, onto two parchment-lined baking sheets. Bake until cookies are light golden brown at edges, 25 to 30 minutes, rotating sheets halfway through. Let cool completely on wire racks.

    Thanks for the recipe. If I can get caught up, I will give it a try.

    I joined my wife and a couple of her friends at the Main Street Station, a restaurant in Blountstown Fl near where I work. I had the chicken, steak and shrimp fajitas, some of the wife's fried green beans and sweet potato waffle fries, and an order of steamed veggies with cheese sauce one of the ladies didn't want. I also had rice and re-fried beans, but I ate them before I thought of pictures. It was all very good, and I still have at least half of my order left for lunch tomorrow.

    2 small Pancakes using coconut oil for greasing the pan, 2 poached eggs and then for snack a dark chocolate sugar free pudding and a 1/2 TBSP of coconut oil straight from the spoon.

    Bummed because I didn't hit my fats and proteins today. :(

    Everything grilled. Pork steak marinated in Korean BBQ sauce, red potatoes, portobello mushroom caps, and asparagus, drizzled with olive oil, salt and pepper. Low carb as I had three small taters.

    I had chinese szechuan style eggplant and 1/2 cup of rice. I also had some stewed apples for dessert.

    As for the Shrimp Chicken Thai Basil with cauliflower rice you'll need the following:

    Cauliflower Rice:

    2-3 heads of cauliflower-grate the florets on a cheese grater until you have just the rice. Heat 2 tbs of olive oil in a pan on med-high. Cook cauliflower until slightly brown.

    Shrimp Chicken Thai Basil:

    ingredients-
    2 chicken breast, cubed
    10-12 small shrimp with shell off except tail
    handful of fresh basil leaves
    3 cloves crushed garlic
    1 small onion diced
    4 green chili peppers
    small red bell pepper sliced length wise
    1/2 tbs curry powder
    1 cup coconut milk
    2 tbs fish sauce
    olive oil

    1) saute garlic and onions until fragrant, about 30 seconds.
    2) add in chicken and cook until brown, then add shrimp and cook for about 1 minute
    3) add the curry powder and fish sauce and mix well, then pour in the coconut milk and
    stir all together
    4)toss in chili peppers and bell peppers then bring to a boil
    5) once it boils, toss in the basil and turn off the heat
    6) basil will continue to wither and cook, continue stirring until it does...

    Serve over cauliflower rice...

    When I got up this morning, I found a recipe jotted down on a note pad. My wife had woke early and thought up a way to use the leftover BBQ Turkey Sausage Burgers. It turned out pretty good. I had planned to add fresh green beans and Jalapeno, but we ran out of time. There is always next time. Also had corn on the cob and a cucumber, tomato and bell pepper salad. {all fresh out of the garden}

    Larro's BBQ Turkey Sausage Burger Noodle Stir-fry

    2 leftover burgers
    16 oz package of sugar snap peas stir-fry
    1 cup corn {out of the garden}
    1/2 cup onion
    1/2 cup bell pepper {out of garden}
    2 blocks beef flavor Ramen noodles

    Stuffed meat balls
    16 oz 90% lean ground beef
    3/4 cup bread crumbs
    1 med egg
    3 mozzarella sticks cut up into 5 pieces each
    Add whatever spices you want.
    Serve over pasta or rice. We had angel hair tonight.

    Also, if you have a gluten allergy, use oatmeal instead, but the calories will be different.

    Mix the bread crumbs, egg and meat into a glass bowl. weigh out 39 grams of the mix and roll into a ball. This will make about 15 meatballs. Put a denture into the middle of each meatball and add a piece of cheese and pinch and smooth back over. Bake at 375 for 20 to 25 minutes.

    Thanks, it tasted amazing too. Here's the recipe, the measurements might not be spot on coz I kinda just threw everything together, but should be close enough....

    ingredients:

    2 tilapia filet
    2 tbsp Oil - Olive
    1 small onion chopped
    4 cloves garlic crushed
    1 tbsp curry powder
    2 tbsp(s) fish sauce
    1 cup coconut milk
    cayenne pepper
    black pepper
    1 small chinese eggplants cut 1 inch thick
    1-2 cups string beans
    4 green chili peppers
    a handful of fresh basil leaves

    Step 1) Heat pan/skillet on med high then heat olive oil. Season fillets with cayenne and pepper and fry until browned and done on both sides. Set on a plate to rest.
    Step 2) Use remaining oil in the pan to saute garlic and onions til fragrant, about 30 seconds. Then add green beans and eggplants and cook until eggplants are brown on both sides.
    Step 3) Mix in the fish sauce and curry powder, then add the coconut milk and green chili peppers.
    Step 4) Bring to a boil while stirring, toss in fresh basil and remove from heat.
    Step 5) Pour over tilapia fillets and serve with rice...

    We put a hamper of peas in the freezer tonight, so supper was mostly leftovers, and late. {but we did get 3 quarts and 6 pints of peas done} We had some of the Turkey sausage burger noodle stir-fry, baked beans, corn on the cob, sweet potato and tomato slices. I also ate some watermelon for dessert.

    Aw man, I didn't take a pic. But we had lemon pepper salmon, grits (with a tbsp of butter and an oz of extra sharp cheddar; sprinkle of salt and pepper), and broccoli. Yummy. My favorite dinner plus it only comes in at 480 calories. SCORE. :smile:

    It was roasted chicken breast, corn on the cob, green beans with new potatoes and fresh black eyed peas. Almost everything we had tonight was out of the garden. Including the salad and Pico de Gallo.
