Today was my wife's birthday and we went to the Wharf Express to eat. I had the Greek salad with grilled shrimp and black bean and shrimp soup. Very good.

Tonight's menu includes Sticky Bourbon Chicken with basmati rice and veggies, probably broccoli for plus Brussels sprouts (for me only since the other people in my house are pansies and won't even give the poor sprouts a chance)

Spinach fruit salad, grilled green beans, squash, onion, chicken breast, and tomato. Then low sugar chocolate pudding with strawberry slices. Yum, yum.

Sesame-Ginger Chicken wraps (serves 6)
1-1/2 lb. boneless, skinless chicken thighs
1 cup Kikkoman stir fry sauce
1 Tbl ginger paste or fresh grated ginger
1 lb package broccoli slaw mix
3/4 c sliced green onions
Place the chicken in crock pot. Mix ginger in stir fry sauce and pour over chicken. Cook on low 7-8 hours or about 4-5 on high. Shred the chicken with a fork. Mix in broccoli slaw and onions and let heat for about 5 minutes. Serve on warm tortillas or lettuce wraps.
With lettuce as the wrap: 254 calories, 13g carbs, 5g fat, 28g protein, 1784mg sodium, 1 gram fiber
You could probably come up with your own sauce if you need to watch the sodium.0 -

Shake and bake pork chop (I didn't realize how high in protein my little 4oz chop was!), mashed potato and gravy. It was very yummy.0

I had lots of leftovers, but decided to just add grilled chicken breast to the spinach fruit salad. Also had a cuke, onion and tomato salad. Then there was some of the new low sugar pudding. This one is made with sugar free jello lemon pudding filling, 8 oz lite cool whip, 3 six oz key lime pie lite yogurt and 2 cups of milk. It was all very good.

More of the cuke, onion and tomato salad. Fresh green beans out of my garden, corn out of my cousin's garden, sweet potato and grilled chicken breast. Then low sugar pudding loaded with high sugar grapes and blueberries.

Seared fresh tuna steaks with a little olive oil and removed. To the searing skillet, I added 2 TBS balsamic vinegar; 2 TBS brown sugar; 1 TBS Dijon mustard; 1/2 C chicken broth; 1/2 TBS soy sauce. Reduce sauce and add 1 TTBS cold butter and add tuna steaks flipping them side to side a couple of times, plate and top with a TBS of sauce. I served with mushroom quinoa and a green salad.0

Someone gave my sister a big pile of peppers, so I bought the makings for stuffed peppers. But one of my friends lost his Mom, and we decided to go to the viewing tonight. Since we were in Blountstown we went by Parramore's Too, the best fish place around here. I got the special, which was the small catfish fingers. Had a Caesar's salad and fried okra as my sides. Also ate a dozen bread and butter pickles [the whole bowl of them], but stopped with four crackers.

Slow Cooker Caribbean Style Pork (4 servings)
1.5 lbs, Pork - Fresh, loin,
2.0 Red Bell Peppers, diced
2.0 tbsp Hoisin Sauce
1.0 tbsp Less Sodium Soy Sauce
1.0 tbsp fresh Lime juice
2.0 tbsp Creamy Peanut Butter
1.0 tsp Ground Cumin
1.5 tsp crushed red pepper flakes
2.0 cloves Garlic minced or crushed
6.0 green onions, sliced (for garnish)
Place loin in slow cooker. Pour in chopped bell peppers. Mix the remaining ingredients except the green peppers and mix (I find that warming everything about 30 seconds in the microwave makes the peanut butter soft enough to mix easily). Pour over pork. Cook on low for about 8 hours. Slice and serve with brown rice, topping with sliced green onions..

Tofu Shirataki "Spaghetti" in a Tomato Cream Sauce
8 ounces tofu shirataki "spaghetti-style", dry-fried before adding the sauce
3/4 cup tomato sauce
1/4 cup low-fat cream cheese
1/4 cup water
1/2 cup diced tomatoes
Garlic, to taste
Onion, to taste
Salt and pepper, to taste
Oregano, to taste

Thanks for the recipe. I love crock pot pork loin, but have never seen any with peanut butter. I'll have to give it a try, but I would change out about half of the bells for Jalapeno or New Mexico Chili's though. {I planted a lot of pepper this year}
That's the beauty of so many of these recipes. You can substitute for whatever trips your trigger. If you like peanut butter, here is my African Groundnut Stew recipe:
Saute (until they smell good; stop before they burn)
1/4 tsp cayenne
1/8 cup cumin (or to taste)
4 cloves minced garlic
Add and cook until they start to soften
2 cups carrots
2 cups celery
1 onion
Add 1 15 oz. can of tomatoes or crushed tomatoes. Cook 10 minutes or so.
Stir in a half to three quarters cup of peanut butter that has been liquefied in hot water. Once you add the peanut butter, stir frequently or it may burn. You can add more water to make it soupier or less to make it more like a sauce.
I often add pre-cooked chicken meat.0 -

Un-stuffed peppers, with added corn, and corn on the cob. Another version of the spinach fruit salad, this one with tomatoes, cucumbers, corn, squash, grapes, blueberries and feta cheese. Very good.

Well, technically it was lunch, but I made noodles out of a zucchini, added that to a pan that I had cooked garlic, red peppers and red onions, then I added my zucchini noodles, lots of parmesan cheese (1/4 cup) and approx. 1/4 cup of diced tomatoes. Topped with a small amount of shredded mozz. It was delicious. Very low calorie, too. Sorry, no pics.
Dinner, I'm making a stuffed chicken, mashed potatoes and corn. Better get my run in!!0
