    I made spicy chicken empanadas with fried leeks, garlic and cottage cheese. It was really good and my first time trying them.

    Tonight was going to be a big mess of leftover chicken & veggies, lentils, quinoa, and a creamy sauce that's basically a simple roux + chicken stock, but instead I'm going to have that for lunch and eat a tub of Campbell's chicken & Chardonnay soup instead. We're sooooo low on groceries... thank goodness tomorrow's payday!

    I discovered this Moroccan chickpea stew recipe a few months ago and it's fantastic! We have it regularly now. Best thing, it's from Myrecipes.com and you can log it on MFP directly from the recipe! LOVE this feature!!

    parmesan lemon tilapia, roasted spaghetti squash with homemade (tomato) gravy, possibly some rice or polenta, salad.

    High protein, low carb tuna bowl (29 gm protein!)

    1/2 haas avocado sliced into chunks
    1/3 cucumber, cut into chunks
    1/3 cup grape or cherry tomatoes
    1/2 cup sugar snap peas (raw)
    1/2 cup clover, alfalfa or other type of sprouts (raw)
    1 can (5.3 oz) albacore tuna, drained
    2 Tbsp Newman's Light Lime dressing.

    I prepped my dinner before leaving for work this morning. Don't know how to upload my picture, but it's Tilapia, whole green beans(frozen), and par cooked quartered baby red potatoes. Sprayed with olive oil and sprinkled with Paul Prudhomme's salmon seasoning and a bit of dill on the potatoes. I'll add some leftover steamed carrots to round it out, but a salad would work too.
    When I get home from work, I'll start the oven and slide it in. Bake for about 30 minutes@3:50 while I change my clothes and say hello to my pets.....and dinners ready!
  • Boneless, skinless chicken thigh, asparagus, and yukon gold potatoes - all grilled.

    Tonight I grilled bacon, BBQ turkey/turkey sausage burgers, sweet potato and onion slices. Also had green beans. Everything was real good. I used the parchment paper on the electric grill for the first time. It worked. Cleanup was much faster.

    This is the first time in week's that I have absolutely no idea lol. I didn't meal prep over the weekend like I usually do and as such I ran out on yesterday and so I am very much winging lunch and dinner tonight.

    Grilled chicken and steamed broccoli. Not because it's the Dieter's Special, but because I actually like it. Tons of spice on the chicken, lots of delicious vinegar and hickory salt on the broccoli, oh lord I am hungry and it's barely 3:30.

    BBQ turkey/turkey sausage burgers with bacon, cheese, onion and a dill pickle on the side. Also had mixed & stir-fry veggies. Then Angel food cake with Lite Cool Whip and strawberries. The burgers were even better tonight. It must have been the pickle. I forgot it last night.

    Tonight's going to be a veggie burger, broccoli, and quinoa, but I have to say that the veggie burger doesn't sound all that appealing. I may change it when the time comes -- maybe have leftover grilled chicken from last night or a couple scrambled eggs. (The perils of pre-logging!)

    Last week husband offered to go to the store for me, armed with my carefully crafted list he came home with most of what I asked for and a few additions (fresh asparagus, corn and heavy cream instead of creamer). Forced to improvise this week, I hit Pinterest for recipes... So Monday we had chicken, asparagus and bow tie pasta with creamy wine sauce and Weds I made crab and corn chowder with cheddar bay biscuits...

    I think I'm going to send him to the store more often!

    I'm back at work, and supper tonight was courtesy of our local Saddle Club. They are having their annual awards banquet tonight. I chose pulled pork, BBQ chicken, baked beans, peas, green bean casserole, cabbage and corn casserole. There was much more that would have been just as good, but the plate would only hold so much.

    Supper tonight was turkey cheese burger stir-fry with a bunch of grapes and a couple slices of garlic parm toast. I used mixed veggies, stir-fry veggies, cut green beans, a BBQ turkey/turkey sausage burger and some 4 cheese Mexican to make the stir-fry. It was very good. The only problem is I'm still a few hundred calories short of my goal, and I'm stuffed. When I've rested some, I'll think of something else to eat.

  • Tonight I made salmon (on sale at target) just seasoned with pepper and lemon slices and grilled it, on the side I had rice long grain white, and a stir fry of zucchini and squash, all just seasoned with pepper, I don't like to add salt or butter(my preference). And green beans steamed. I don't have a pic, but it was yummy, filling and I felt good after eating it.

    Friday - Beef teryiaki with rice and veggies on a bed of spinach and strawberries.

    Saturday - Went to the Spaghetti Factory. Chicken Marsala, spaghetti with brown butter sauce and mitzra cheese, green salad with a little pesto ranch dressing.

    Sunday - A mess on a plate, but yummy. Turkey sandwich with tomato, onion, mushroom, mixed greens, mixed sprouts, cheddar jack cheese, mayo and mustard; raw asparagus, coleslaw, cucumber, and red grapes.

    Supper tonight was a grilled sausage sandwich. Also had grilled onion and pineapple slices, plus green beans and mixed veggies {with extra corn}.
