    Here is the recipe:

    2 ripe bananas, mash bananas with fork until creamy
    1 1/2 cup of oatmeal
    1 cup unsweetened apple sauce
    1 teaspoon vanilla extract
    1 teaspoon cinnamon
    1/3 cup craisins
    1/4 cup toasted sliced almonds

    Preheat oven to 350F.
    Mix vanilla extract & cinnamon into applesauce.
    Blend applesauce mix with all other ingredients. Let sit for 10 minutes.
    Drop cookie dough, by spoonfuls, onto a parchment paper lined cookie sheet. Flatten cookies into rounds.
    Bake 20-30 minutes, or until golden brown.
    Remove from oven and let sit 5 minutes. Move to a cooling rack.
    Store in a covered container when completely cool.
    Enjoy.

    Mango can be used instead of banana, and walnuts instead of sliced almonds.

    I am going to try this today. Thanks! Rarely see a recipe I haven't already made or seen somewhere else.

    I hope you enjoy them. We had them several times within a short period and liked them a lot, then haven't had them in months. I need to put them back in the rotation. Thanks for the reminder.

    I cooked a pot of peas this afternoon. I used some of the rib meat {and a Tbs of bacon fat} for seasoning. Also had leftover pork chops.

    This is from the Halloween party at work tonight. Taco soup, deviled eggs, chips and salsa, hot wings, "zombie" pigs in a blanket, pastrami, pepperoni, cheese, spinach dip and crackers. All very good.

    No pics this time, but will next time!

    Yesterday I had too many things for supper, including a really good goulash casserole like thing with bisketti noodles, elbow macaroni, and rotini with cheese on it. Yummy! That and I think I ended up eating way too many candy corns. So good, but I know eventually the calories will end up adding up.

    Betty's MexiCauli Casserole

    13.7oz cooked, Perdue Ground Turkey 85/15
    6 tbsp Mission Chunky Salsa Medium
    3oz Great Value Cream Cheese
    1 cup Great Value Fiesta Blend Finely Shredded Cheese
    2 tbsp Piggly Wiggly Picante Sauce Medium
    1 1/2 cups Homemade "CauliRice"
    1/4 cup Water
    1 tbsp Betty's Taco Seasoning Mix by the TBSP

    1. Preheat oven 350F. Apply cooking spray to casserole dish.
    2. Brown turkey. Drain. Put back into pan. Add cream cheese, salsa, and water. Cook on med-low heat. Stir frequently until cream cheese is melted. Add the taco seasoning and stir to blend. Add 1/3 cup of the Fiesta Blend cheese. Stir until cheese melts. Remove from burner. Set pan aside for now.
    3. Grate cauliflower florets until you have 1 1/2 cups of the "CauliRice".
    4. Move the turkey mixture into the casserole dish. Spread out evenly.
    5. Next spread 1/2 of the "CauliRice" over the top of the meat mixture.
    6. Sprinkly 1/3 cup of the Fiesta Blend Cheese over the "CauliRice".
    7. Spread a last layer of the "CauliRice" over the cheese.
    8. Sprinkle that last 1/3 cup of the Fiesta Blend Cheese on the top.
    9. Tamp the toppings down slightly with the palm of your hand.
    10. Spread the picante sauce across the top of the casserole.
    11. Bake 350F for 30-35 minutes until topping is crispy and brown.
    12. Makes 9 servings. Each serving has 153 CALORIES, 3g CARBS, 10g PROTEIN, 11g FAT, 201mg SODIUM, 18mg POTASSIUM, and 56mg CHOLESTEROL.


    ****here's my taco seasoning recipe which is used in this recipe above****

    Betty's Taco Seasoning Mix by the TBSP

    2tbsp + 1/2 tsp chili powder
    1tbsp + 1/2 tsp ground cumin
    2 tsp onion powder
    1/2 tsp ground black pepper
    2 tsp garlic powder
    1/4 tsp cayenne pepper
    1/2 tsp ground oregano
    optional: red pepper flakes

    makes 5 servings of 1 tbsp each. Per tbsp serving: 7 CALORIES, 1g CARBS, 0 PROTEIN, 0 FAT, 289mg SODIUM, 3mg POTASSIUM, and 0 CHOLESTEROL.

    And a good looking picture it is. When I get caught up, I'd like to try that recipe. But Margie asked for grilled sausage tonight. I'm thinking of doing half of it in stir-fry though.

    Supper tonight was a sausage sandwich {with mustard, mayo, Pepper Jack and pickles}, potatoes and onions, Thai sausage and chicken stir-fry, and green beans. Very good.

    Seared tuna sashimi with honey-wasabi sauce and sushi rice. The "noodles" are stir-fried zucchini and yellow squash with a yakisoba sauce. Glad I changed my mind about skipping dinner.

    The Quilter's Club had their monthly birthday supper. Tonight's theme was German food. Not sure if those are German collards or not, but they were good. Also had cornbread salad, a chicken noodle casserole, shepherd pie, yams and chicken and rice. It was all very good.
