    Mashed sweet potatoes

    put whole potatoes with skin in the oven 350, 1 hour until soft
    cool
    mash in lumpy small peaces, mix in some olive oil
    oven 250 until ready to eat.
    Mix before serving 1 bunch cut cilantro throughout
    add to taste some fruity vinegar, like champagne vinegar on top

    That's it.

    The green cilantro flavor and the vinegar makes a nice contrast.

    From Rachel Ray....smashed sweet potatoes! The only kind I will make now! SO YUMMY!

    1 sweet potato per person
    1 cup approx chicken stock
    honey
    zest and juice of one lemon

    THAT's IT!

    Cube sweet potatoes and boil until tender. Drain, add chicken stock juice and zest of lemon and generous squeeze of honey (more can be added later if need be)....Mash it all together! The lemon adds great brightness to the flavor. They are very low in cal's since there is no cream or butter.

    I HIGHLY recommend trying these...they are very very very good!

    OK - so my recipe also includes the last challenges ingredient - chickpeas!

    Moroccan Vegetable Stew

    4 cups chopped mixed vegies (carrots, celery, cauliflower, leek, beans)
    500g sweet potato diced
    2 400g cans chickpeas
    2 cloves garlic, crushed
    1 red onion diced
    Chilli to taste
    6 ripe tomatoes, diced
    1 sachet Masterfoods Moroccan Marinade

    Combined all ingredients in a casserole dish and cook at 170C for approx 90 mins or until vegies are tender. Cneck occassionally and if it appears to be too dry, add a little water.

    In my opinion, this is a great recipe. I have it for lunch sometimes or as a replacement for the usual vegies.

    This serves 8 and is approx 245 cals per serve.

    For additional flavour, you can add some curry powder.

    Sweet Potato Biscuits, great for Turkey Day from Self magazine

    1 medium sweet potato
    1 1/4 cups whoe wheat biscuit mix
    2 tbsp chilled, unsalted butter, cubed
    1/2 cup lowfat buttermilk
    1/4 tsp ground allspice

    Wrap sweet potato in paper towel. Microwave on hogh until soft, 4 minutes. Scoop flesh into bowl & mash, set aside. Heat oven to 400. Place biscuit mix and butter in a bowl, rub butter into mix with fingertips until large pea sized crumbs form. Add sweet potato, buttermilk and allspice, mix until combined. Transfere dough onto cookie sheet and form into a 12" x 4" rectangle. Cut into 8 rectangles with a serrated knife and seperate slightly. Bake until biscuits are firm to the touch, 8-10 min. Transfer to wire rack to cool. Once cool, store in airtight container for up to 3 days.

    124 cal per biscuit, 5g fat, 3g saturated fat, 15g carbs, 2g fiber, 3g protein serves 8

    Here's what I do for my kids and they love it!

    Bake sweet potatoes whole in the oven for 45 minutes or so (until you can pierce and it is soft inside).

    Take out, cut slits in top, and place inside the following:

    - small pat of butter (or yogurt butter which I use)
    - sprinkling of cinnamon
    - tsp brown sugar
    - 6 mini marshmallows

    Put back in the oven and bake for 10 minutes more...you get a yummy, sweet, marshmallow gooey sweet potato that even a kid will love, and with only ~50 extra calories added.

    Might be something similar and I missed it. I love obrien pototoes and wondered what if I could do something similar with sweet taters. Ended up adjusting to a sweeter version. Going to keep it simple.

    Sweet Tater cut into cubes

    Dash of the following:
    Salt
    Nutmeg
    Cinnamon

    Heat about 1 tbsp oil at med-med high. Add potatoes, sprinkle seasoning, stir till evenly coated. Cook covered about 8 min, then uncovered for another 8 or until tender.

    1 tsp. maple syrup
    2 tbsp. chopped pecans

    DIRECTIONS: Boil potato, mash or whip with curry, butter, & syrup, top with pecans

    CALORIES PER SERVING: approx. 250

    HOW MANY IT SERVES: 1

    OPINIONS ON HOW IT TASTED, ETC: Ever since I tried this, I can't eat sweet potatoes without curry! It's a match made in heaven. This is good if you're trying to watch your sodium. It makes a good lunch!
