    Morels! The best thing about Michigan.... the winters here suck, but we have morels. Yummy... Sliced, sauteed in butter, don't need breading.

    Another vote for beets!

    And another...I like 'em pretty much any way they come, but I do make one kick *kitten* red beet and horseradish salad.

    Barley. Not a commonly eaten cereal but I have it all the time.
    I like pork tongue and brain. Too finicky to cook so I don't make it but insist on it every time I visit family.

    Brussels sprouts! Sliced or shredded, tossed in a little coconut oil, salt & pepper, a sprinkle of parmesan, and roasted at 450 degrees for 15 minutes. I could eat them all day, every day. Maybe I should. :tongue:

    Another for cottage cheese! I had some left over after making moussaka one night, and my boyfriend hadn't tried it before. Now we easily go through 3 containers in a week.

    Cottage cheese in moussaka? Did you use it in the béchamel sauce instead of cream?

    Parsnips are delicious! In the autumn, I enjoy cooking them with carrots in lemon juice, olive oil, and pepper and then mashing them, a lot less starch than potatoes and tastier as well. Do you have a particular recipe?
