    Thanks for posting the pics. I tried a cauli-crust pizza 2 nights ago and it was YUM! I need to play with the recipe a bit though. I like your idea of egg beaters. I used fresh mozza and it did not really help it to stick together. I don't mind it falling apart so much, but I have a feeling my husband won't be so agreeable. He really loves his pizza nights.

    Oh. My. Gosh! This was sooooooo delicious! Could not tell that it was cauliflower at all!

    I used 1 cup of riced cauliflower, 1/2 cup low fat mozzarella and an egg for the crust.
    I ended up having to bake mine for 21 minutes, not sure why.
    I topped it with marinara, spinach, canadian bacon, roma tomato slices and 1/4 cup low fat mozzarella.
    I also added some Slap Ya Momma cajun seasoning to it along with the oregano and parsley! Didn't have any fennel.
    My total calories were 455. I cut it into 6 pieces and could only eat 5!! It really filled me up!

    Tomorrow I am going to try the cauliflower as rice and eat it with some leftover gumbo in the freezer and see how it is!
