    bump! also found a recipe that is similar but uses whey protein powder if anyone is interested:
    http://leanbodylifestyle.blogspot.com/2011/10/healthy-oatmeal-protein-cookies.html
    1 cup oats
    4 scoops vanilla whey protein
    1/2 cup unsweetened apple sauce
    1/2 cup egg whites
    1 tbsp. stevia
    1 tsp. olive oil
    Raisins (optional)
    Cinnamon (optional)
    bake at 325*F for ~10-15 minutes, may be less
    makes ~10 cookies or so

    How did these turn out? I'm looking for something like this but without the banana in it. Thanks!

    For those that made the original recipe - can you take the banana out and it still work? I already know I'd replace the oil with applesauce. Thanks!

    bump for later... may have a banana spree day... I found a recipe for banana pancakes...

    Ingredients

    * 1/3 cup of Quick Rolled Oats
    * 1 Over-Ripe Banana (should have a few brown spots)
    * 1 tsp Baking Powder
    * 1/3 cup of Egg Whites
    * 1/2 tsp Vanilla

    Put the quick rolled oats into a food processor/magic bullet/blender and blend until they are a fine consistency, sort of like chunky flour. Add the other four ingredients and blend until smooth. Pour mixture onto a non-stick skillet and fry until big bubbles form. Flip and cook for another minute.
    Makes 4 pancakes.
