A great read - thanks! I'm in the UK and I'm not sure if we have Laughing Cow cheese. I wonder if Boursin would do? Or maybe Philadelphia-tye cheese? Is there any reason you couldn't cook up the sauce in the same pan with the meat after you've browned it? (I'm a lazy old one-pan person).
