    I tried it tonight with the yogurt. My cauliflower must have been smaller than what is called for because with 3/4 cup yogurt it was really runny. After it came out of the microwave it was a little less runny. I didn't fool anyone here though. LOL Everyone knew right after the first bite that it was cauliflower, so only my husband and I ate it. Oh well, it was still good! Maybe next time I will try to put one potato in there and see if that helps fool the kids?!

    A few people have messaged me and said that their mashed cauliflower was runny. This does not have to be the case!

    I have made this recipe a hundred times and the important thing to remember is that you have to drain the cauliflower thoroughly.

    I let it sit in the colander for several minutes.

    For calorie-saving reasons I use only a half can of condensed cream of mushroom soup but it's okay to use the entire can for extra tasty mashed cauliflower. It adds a few calories, but on a per-serving basis it's still very low calorie.

    Remember to spice it however you need to in order to quell any cravings you've got. I use lots of garlic and onion powder, basil, oregano-- even chili powder, sometimes.

    Then microwave it until it's piping hot.

    Do you need gluten-free?

    Progresso makes a gluten-free cream of mushroom soup that is fabulous. It isn't condensed-- but I've used it many times and it works very, very well.

    Bump! I've heard about this "fake mashed potatoes" recipe for years but never believed it would actually be as good as mashed potatoes. I am going to try it though based on all the positive feedback here. Thanks for sharing! You've finally motivated me to give it a shot!

    to try and help with the 'runnyness' maybe put back into the pot that you boiled the cauliflower in and back on the stove - on the same burner you cooked on, with the heat turned off - for a few minutes, it takes out some of the moisture!
