    Jess - I had an inner debate this morning about making these for dinner or trying something new. These lost today, but I am making them tomorrow! :laugh: So tasty!

    Too funny! I was deciding between trying out a new recipe from my Biggest Loser cookbook or making these. My kids decided it was the meatloaf muffins tonight, I'l try out something new tomorrow! :wink: (and I'll post if they're any good!)

    They turned out great again! I changed it a little again...

    1 teaspoon olive oil <I omitted>
    1 cup finely chopped onion
    1/2 cup finely chopped carrot <I omitted>
    1 teaspoon dried oregano
    2 garlic cloves, minced <I used 2T. minced garlic>
    1 cup ketchup, divided <I used an 8oz can of Hunts tomato sauce, basil oregano flavor, and then topped w/ some organic ketcup>
    1 1/2 pounds ground beef, extra lean (raw) <I used 2#, 1 pound of beef, 1 pound of venison>
    1 cup finely crushed fat-free saltine crackers (about 20) <I used 1 c. old fashioned oats>
    2 tablespoons prepared mustard
    1 teaspoon Worcestershire sauce
    1/4 teaspoon freshly ground black pepper <I also added some garlic & onion powder>
    2 large eggs <I just used 1>
    Cooking spray

    Here is what I figured out for nutritionals.

    160 cals, 6g fat, 6g carb, 1g fiber, 19g protein

    My kids gobbled them up again and want the leftovers for tomorrow night. :bigsmile:

    I love that these are such a hit! LOL! Especially with the kids!

    Your changes seem to be good ones. I imagine you could switch these up a variety of ways.

    Thanks for the idea!! I never would have thought of making muffins and I'm glad my kids love them so much! :bigsmile: I've tried making meatloaf before but they would never try it! :grumble:

    I did not read through the whole thread but wanted to add if no one has that these freeze very good. Double the recipe and freeze. I take them out of the freezer to frig in morning. Bake for about 45-60 min with a sweet potatoe and all you have to do is make a vegetable for an easy meal.

    I also love CL mag!

    I made these using ground turkey since my hubby won't eat beef and they were delicous! I did everything else the same.

    I made these using ground turkey since my hubby won't eat beef and they were delicous! I did everything else the same.

    I'm making these tonight! I'm using the ground turkey too, just less fat in general. Can't wait maybe some steamed asparagus and sweet potato fries, yum!

    Yummmmy-- Made these for dinner tonight. The kids ate them, although you could tell that they weren't excited about it. Of course, the first time I made veal parmesan, they didn't like that, and now it's one of everyone's favorites. Too bad for them, I doubled the recipe, because we can have leftovers on the busy running nights really easy.

    These were definitely a hit in my house. My 2 year old son and my hubby loved them. Will probably make again soon. Had them with some potatoes (mashed for them and a baked potato for me), veggies and salad! Talk about a satisfying meal!
