  • Stir-Fry of Pork with Vietnamese Flavors

    Ingredients

    * 2 tablespoons finely chopped fresh ginger
    * 2 serrano or jalapeño peppers, seeded and finely chopped
    * 4 cloves garlic, finely chopped
    * 3 tablespoons fish sauce, divided
    * 2 tablespoons orange juice, divided
    * 1 teaspoon cornstarch
    * 1/2 teaspoon freshly ground pepper
    * 1 pound pork tenderloin, trimmed and cut across the grain into 1/4-inch-thick slices
    * 1 tablespoon sugar
    * 3 teaspoons canola oil, divided
    * 2 cups finely sliced onions, (2-4 onions)
    * 1/4 cup sliced fresh cilantro leaves

    Preparation

    1. Combine ginger, peppers, garlic, 1 tablespoon of the fish sauce, 1 tablespoon of the orange juice, cornstarch and black pepper in a shallow dish. Add pork and toss to coat it with marinade. Set aside to marinate for 10 to 20 minutes.
    2. Mix sugar, the remaining 2 tablespoons fish sauce and 1 tablespoon orange juice in a small bowl.
    3. Heat a wok over high heat. Swirl in 1 teaspoon of the oil. Add onions and cook, stirring, until limp and caramelized, about 5 minutes. Transfer the onions to a plate. Wipe out the pan. Add the remaining 2 teaspoons oil to the pan and increase heat to high. Slowly drop in pork and stir-fry until browned and just cooked through, 2 to 3 minutes. Add the reserved fish sauce/orange juice mixture and the reserved onions; toss until the pork is coated with sauce. Sprinkle with cilantro and serve over rice.

    I am catching up team! slowly but surely is my game this week!

    completed on Wednesday-
    day 1~ 50 squats
    day 2~ 50 swimmers press +1 mile

    completed on Thursday-
    day 3~ 50 sit ups/ 50 mountain thingys
    day 4~ 100 jumping jacks/ 3 sets of 21

    Wednesday I also worked out with trainer for 30 minutes and did 20 minutes on treadmill
    Under calorie and drank all my water

    Under calories for both Thursday & Friday. Also 10 cups of water for each day (maybe more). Completed exercises.


    Also walked 2 miles today toward team goal & will do one tomorrow. Go Team!

    TGIF!!! I am sooo ready for the weekend.

    Here’s how my day went:

    Calories: UNDER
    8 glasses of Water: DRANK
    50 Globe Jumps: DONE (Do NOT under any circumstance do these AFTER you have drank a protein/fruit smoothie - just sayin')
    100 Jumping Jacks: DONE
    100 Stair Climbs: DONE - by way of Stair Climber at gym. Was on it for 20 mins so I am quite sure I climbed a 100 stairs...

    Miles towards 100 mile challenge: 3 miles on stationary bike

    Okay, even with the horrible day at work (I'm still working at home at 10 PM on the Friday before my vacation...), things have gone pretty well food-wise.

    - We don't have stairs, so I did 100 bicycle crunches.

    How many more miles do we need for our team? Let me know...I can do several tomorrow!!
  • FROZEN SNICKER PIE - serves 8

    1/2 cup graham cracker crumbs (3 fat-free graham cracker squares)
    12 oz. sugar free vanilla-flavored nonfat frozen yogurt (or SF FF ice cream)
    1 c. light whipped topping
    3 tbsp. chunky peanut butter
    1 1.4 oz. box sugar-free chocolate-flavored instant pudding Whip topping for top of pie (about 1 cup)

    Press graham cracker crumbs into an 8x8-inch baking dish; set aside. In large bowl, combine frozen yogurt, whipped topping, peanut butter and pudding mix; stir well and press into pan, being careful not to disturb the crumbs. Freeze 2 hours or until firm. Top with thin layer of whipped topping if desired. Let thaw 10 minutes before serving.

    Each serving:
    223 Calories; 15g Fat (59.6% calories from fat); 4g Protein; 19g Carbohydrate; 1g Dietary Fiber; 34mg Cholesterol; 166mg Sodium
