    As of right now, we have 35.3 miles towards the 100 miles already! Keep it up. I'll be bringing in another 3 miles tomorrow for the team, providing my quads can function. I don't know about you guys, but my legs, between running and Insanity and those flipping squat kicks yesterday are spent.

    Green Bean Salad (Serves 4)

    Green Beans, raw, 2 cups
    Fresh Mozzarella, 4 oz, cubed
    Artichoke Hearts, 1 can, water packed, rough chopped
    Grape Tomatoes, 8 oz, halved

    Dressing:
    Red Wine Vinegar, 2 TBS
    Dijon Mustard, 2 tsp
    EVOO, 1 tsp
    Water, splash or two
    Fresh ground sea salt
    Fresh ground pepper

    For Salad:
    Blanch green beans in a large pot of lightly salted boiling water 3 to 5 minutes or until crisp-tender.
    Drain and shock under cold running water.
    Toss cooled green beans with mozzarella, artichoke hearts and grape tomatoes.

    For dressing:
    Combine vinegar, mustard, olive oil, salt and pepper and water. Whisk to combine.
    Spoon over salad.
    (I usually forgo the dressing and just use a little fresh lemon juice)

    Monday, Tuesday, Wednesday, calories under, water done, exercise done.

    I posted my extra miles for Monday on Monday. I don't remember how much they were. I have to check on the forum.
    Tuesday I did 2.5 extra miles. Wednesday I walked 1 extra mile and I'm about to go running. I'll run 1.5 extra mile tonight. I usually run 2, 2.5 miles, I can do 4 since I really need the extra burn.

    I don't know how to log the exercises we are doing for the challenge. Do they go under cardiovascular or weight training.

    I jogged 2 miles this morning for the team 100. As of this morning (Thursday) at 7:20 EST, we are at 61.3 miles! Keep up the great work :o)

    Sorry I was posting in the wrong place. It is great to have a new board each week! Ok, I am up-to-date on all challenges up through yesterday, and so far 2 miles toward our mileage. I hope to get more in today and this weekend. And looking for the recipe....where exactly do we post that?
