    We have 98 miles towards the 100 for the team. I plan on getting a run in tomorrow since I took yesterday off.

    Forgot to post a recipe. . this one isn't necessarily healthy. . but it's really good, especially warm from the oven. . I use more banana than it calls for. .

    Banana Chocolate Chip Cake
    1 1/2 cups all-purpose flour
    2/3 cup white sugar
    1 1/2 teaspoons baking powder
    1/4 teaspoon salt
    1 cup mashed bananas
    1 egg
    1/2 cup unsalted butter, melted
    1/4 cup milk
    3/4 cup semisweet chocolate chips

    Directions

    Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
    In a large bowl, mix flour, sugar, baking powder and salt.
    In a separate bowl, combine bananas, egg, melted butter and milk.
    Stir banana mixture into flour mixture until blended. Be careful not to over mix.
    Stir in chocolate chips.
    Pour batter into 9x13 inch pan. Bake at 350 degrees F (175 degrees C) 30 to 35 minutes, or until a toothpick inserted into center of cake comes out clean. (It will have some melted chocolate, but no crumbs.)

    It wasn't a good day for me.
    I was over 27 calories. I did not drink enough water and feel really bad about all the food I ate. :(
    But, I did the challenge including the extra mile, and walked an extra 1.5 for the team.

  • Just ran an extra 2.5 miles for the team because I went over cals the past two days!

    Water always over.
    Calories under all days expect yesterday and today might be an over day as well.

    yesterday I walked 5 extra miles for the challenge.

    Chicken tacos with fresh pico de gallo.

    Ingredients.
    Grilled Chicken Breast (2)
    Onion ( 1/2 cup)
    fresh green jalapeno pepper ( 2)
    tomato ( 1)
    tortillas (3)
    Lemon juice ( 2tbs)
    sea salt ( a pinch)

    Steps For Salsa
    1. Dice onion, green pepper, and tomato. Mix in a bowl. Add lemon Juice and the pinch of salt. Mix once again. Set aside

    2. Shred grilled chicken. Heat tortillas on the stove. Add shredded chicken to each tortilla proportionally. Add the salsa to each taco.
    3. enjoy.

    Friday the 12th was a rest day and not enough water and over on calories.

    Saturday (i hate to admit) was another rest day and i ate horribly. Im feeling all gross about everything I ate.

    Sunday back on the right track with eating and water. I am going to do all the exercises from Friday and Saturday today to make myself feel a bit better about eating so bad. I should NEVER make cheesecake again. It was so good I couldnt stop eating it.

    I have met all challenges including the water and Had a weight loss of 2lbs!. I also did an extra (above the challenges) of 10 miles last week

    Yam Pone
    Makes 6 to 8 Servings
    1/2 stick butter, softened
    1/4 cup brown sugar
    2 eggs
    1/2 cup evaporated milk
    1/2 cup all-purpose flour
    1/4 teaspoon nutmeg
    1/4 teaspoon cinnamon
    1 1/2 teaspoons baking powder
    1/2 cup cane syrup*
    1/4 cup honey, warmed slightly
    1 teaspoon vanilla extract
    2 cups grated yam

    *Note: Can syrup is a thick sweetener. If unavailable, substitute 2 partys dark corn syrup and 1 party molasses.

    Preheat oven to 350 F. In a large bowl, cream butter and sugar. Beat in eggs and mil. Sift together flour, nutmeg, cinnamon and baking powder into a medium bowl. Add flour mixture to butter mixture; mix well. Add can syrup, honey, vanilla and grated yam. Mix well and pour into a greased baking dish or casserole. Bake for 1 hour.

    Probably not the lowest in sugar, but a great recipe for Thanksgiving, which will be here before we know it.
