Pumpkin Muffins (UNDER 100 CALS!!!)

Ok, so since it is September and all..I figured summer is officially over...bring on the fall foods! (they're my favorite!). Today I found a recipe online for pumpkin muffins and I adapted it a little. These muffins are extremely easy and unbelievably delicious! They came out super moist....simply wonderful! (I wanted something to take with me to study...the pumpkin loaf at Starbucks is so tempting...but these will for sure be an awesome substitute!)

1 box of Spice cake mix (carrot cake mix would probably work too)
1 15 ounce can of pumpkin (not pie filling)
1/2 cup of milk (I used 1%)
1/2 cup of water
1 egg (I used egg substitute since I am on a low cholesterol diet)

Mix all ingredients together with an electric mixer. Divide into muffin tin with muffin cups. Bake for about 18-20 minutes at 350.

24 Servings, 1 muffin a serving

Calories: 91
Fat: 1
Saturated Fat: 1
Carbs: 19
Fiber: 1
Protein: 2

Next time I make these I am going to add pecans on top....super yummy!! Enjoy!

    Thanks you! I love fall food and have been worried about those cravings starting up soon. I think this will help. I am going to try the carrot cake mix idea as I love carrot cake and it would increase nutritional value. Just hope I can avoid binging on them.

    I make these with just pumpkin, the cake mix and if the batter is too thick a bit of water. They come out moist and delicious. When I wasn't dieting I threw in coconut and nuts and it was wonderful!!! You can also try any flavor of cake mix with the pumpkin......the pumpkin does not have a flavor just acts as the oil and the egss. I loved a chocolate cake mix in it with nuts and coconut.

    I have no idea how many calories though are in the cake mix......

    The batter will be thick and will not rise much so they sometimes come out looking really ugly but they taste the same. It can be cooked as muffins or in a 9 in pan. I like the muffins best but the pan works, too.

    The original recipe did not call for any water but several of us found that they needed a bit more of moisture to get the batter in the pan. I add up to half a cup sometimes. I think it depends upon the cake mix or something because sometimes it just has a different mixture quality to it.
