Is anyone having trouble finding regular canned pumpkin? All I can find is canned pumpkin pie mix. It is loaded with corn syrup and has 3-4 times more calories! Would love to hear from someone in the Cleveland, OH area as to what food store you found it at. Thanks!0

To Keyer ... we are having the same problem. We were told by our local Giant that there were some bad weather conditions that caused the pumpkin crop to not do well and there is a shortage of canned pumpkin. The only place I have been able to find pumpkin is the health food store (Common Market) and it was over $3 a can!! Good luck ...0

There was a shortage on pumpkin last year, too. It was hard to find.0

these muffins sound wonderful. just a question, in the OP you said u used an egg substitute. are the food values (like fat) correct for the substitute, or with egg? I just want to make adjustments to what I record if necessary.0

I have a co-worker who makes a pumpkin cake that I love, but I don't know the calories and I have to scrape the cream cheese icing off of it. I wanted to try this recipe for something similar but much healthier. I made it tonight and OH MY GOODNESS!! So good, not as sweet as the co-worker's cake, and more of a muffin texture - this made it even better!!
I used 1 egg so my nutrition values were slightly different, but I put everything into the my recipe section and voila! I couldn't find my muffin tin either so I had to make a sheet "cake" and cut it into 24 squares (it also had to cook a bit longer). No matter though, I had a piece with homemade vegetable soup tonight and I'm going to have another piece in the morning for breakfast.

Let's really give Starbucks a run for their money shall we?? Their new pumpkin spice latte is back...seriously...just walking by Starbucks and seeing the picture of it on the door makes my mouth water....but it is a ridiculous amount of calories, sugar, and carbs for a tall...pair that with the pumpkin loaf...YIKES!!!
So...I found this recipe on how to make a homemade pumpkin spice latte...it is much, much healthier for you, delicious and it won't cost you an arm and a leg! http://www.frugaldreamer.com/?p=499
To make 1 latte....
1 Cup of Milk (nutritional facts are with regular vanilla soymilk)
1 Tbs of canned pumpkin (NOT pumpkin pie)
1 Tbs of Sugar (nutritional facts are with Splenda)
1/2 Tbs vanilla extract
1/4 Tsp of pumpkin pie spice (more/less to your liking)
1/2 Cup of strong brewed coffee
In a saucepan, combine milk, canned pumpkin, and sugar
Cook on medium heat, stirring until steaming (NOT boiling)
Remove from heat and stir in vanilla and pumpkin spice seasoning
Whisk mixture until frothy
Pour mixture into mug and add coffee
(optional: add some fat free whipped cream and sprinkle on some more pumpkin pie spice)
Nutritional Facts (Homemade Soy Pumpkin Spice Latte):
Calories: 119
Carbs: 13g
Fat: 4g
Sat. Fat: 1g
Fiber: 2g
Protein: 6g
VS
Starbucks Nutritional Facts (Grande Soy Pumpkin Spice Latte):
Calories: 300
Carbs: 54g (48g sugars!!)
Fat: 4g
Sat. Fat: .5g
Fiber: <1g
Protein: 11g
Pair this with the pumpkin muffins and you will have all those people waiting in line at Starbucks asking you where you got your treats!0 -
