    My old crockpot chicken standby is similar to this. After I put the bag of frozen chicken in the slow cooker, I add a can of Rotel (diced tomatoes with diced green chiles)- it's cheaper than salsa, and a packet of taco seasoning. After its all cooked I like to use the leftover juice to make rice, and then keep all the chicken in the fridge to use on everything, my favorites are over salad, soft tacos, rice, and in lettuce wraps. Lean and delicious!

    I found a great recipe like this on http://crockpot365.blogspot.com/
    I made some changes like not adding mushrooms and I use black beans, and red bell pepper. I also add some other seasonings that I prefer. Yours also sounds delicious. Hope this site helps you for some new :smile: .

    I searched for this but didn't see it, so I'd like to share!


    4 boneless, skinless, frozen chicken breasts (about 34oz)
    1 jar of your favorite salsa (16oz jar or close to)
    1 bag of frozen sweet corn ( I use about 3/4s, a whole 12oz bag is a bit much for me)
    1 can of beans (I prefer pinto or great northern)
    8oz fat free cream cheese (or low fat but adjust calories accordingly, fat free is 210cals)

    Mix together the first four ingredients in a crockpot set to low. Stir occasionally and let sit for 6 hours. Half an hour before serving, use a fork or mix it up really well to shred the chicken. Add in the cream cheese and stir as needed. Serve with bakedtortilla chips as a dip or in a taco shell/tortilla. thanks nice to have something new to try

    Yields 6 servings, 267 calories. Or 4 servings at 400 calories.
    For the low carbers, at 6 servings this yields 14.3 net carbs per serving.
