Crustless Spinach Pie
What You Need
1 cup 1% cottage cheese (I use low fat, 25% less sodium)
4 oz reduced fat low moisture part-skim mozzarella cheese
1/4 cup yellow onion (and any other veggies you like - mushrooms, red/green peppers, tomatoes, etc.)
8 oz frozen baby spinach (you can use fresh as well)
3 large eggs (or egg whites)
1/4 tsp black pepper
2 cloves garlic
Make It
USE FRESH SPINACH and wilt over low heat in pan.
CHOP ONION and mince garlic.
COMBINE ALL INGREDIENTS in medium bowl.
SPRAY PIE DISH with non-stick spray. Pour mixture into pan.
BAKE AT 350 °F (175 °C) for 45-50 minutes.
I didn't post the nutritional information because there's many variations to this. When I make it however, I use egg whites in place of regular eggs, add mushrooms and peppers and it comes to about 70-90 calories per piece (depends on how big of a piece you take!)

Exactly!!! I make it on a Sunday and it lasts me pretty much up until Thursday! I just eat it with ketchup because, well, I eat ketchup on everything! It's so easy and fast to make and keeps well! AND it's low cal and very versatile.0 -
