What You Need
1 cup 1% cottage cheese (I use low fat, 25% less sodium)
4 oz reduced fat low moisture part-skim mozzarella cheese
1/4 cup yellow onion (and any other veggies you like - mushrooms, red/green peppers, tomatoes, etc.)
8 oz frozen baby spinach (you can use fresh as well)
3 large eggs (or egg whites)
1/4 tsp black pepper
2 cloves garlic
Make It
USE FRESH SPINACH and wilt over low heat in pan.
CHOP ONION and mince garlic.
COMBINE ALL INGREDIENTS in medium bowl.
SPRAY PIE DISH with non-stick spray. Pour mixture into pan.
BAKE AT 350 °F (175 °C) for 45-50 minutes.
I didn't post the nutritional information because there's many variations to this. When I make it however, I use egg whites in place of regular eggs, add mushrooms and peppers and it comes to about 70-90 calories per piece (depends on how big of a piece you take!)

I'm making this right now! Although I added chicken and a few different veggies. I also only used 1/2 a cup of cottage cheese because that's all I had. And I used a little feta on top... but it looks like it will be amazing when it's out of the oven and it smells SOOOOOOOOOOOOOO good! I put it in the oven before I hopped in the shower and the scent hit me when I came out and I almost drooled a little.
I cannot thank you enough for posting this! I don't think I've ever had spinach pie besides maybe if you count quiches.
