I need some new ideas... I'm getting bored of what I've been eating.

    Asian Turkey Meatballs With Lime Sesame Dipping Sauce with broccoli. I'll add rice as a side for the family.

    Yesterday I made Kalyn's Stuffed Cabbage Casserole. Huge hit! I want it again tonight but ds hates the same meals back to back.

    I'm having roasted brussel sprouts with bacon
    Roasted potato-with minced onion, garlic salt, black pepper and parsley
    Tilapia seasoned with Trader Joes 21 seasoning salute and lemon

    DH will have the same minus the tilapia--he's going to have the left over italian sausage from last night since he doesn't eat fish

    Planning on making Pho so Ill be doing alot of julienned vegetables, I have fresh chicken stock thawing out right now, Ill be using shirataki angel-hair noodles instead of rice noodles, tons of bean-sprouts, fresh Thai basil, my szechuan chili peppers are ready and lots of fresh green cilantro...Will be doing chicken, squid and shrimp...

    Right now I'm thinking either grilled salmon and mashed cauliflower with mushroom gravy, or shrimp stir fry with brown rice. Unless the hubs has a better idea. I'm not much of a planner.

    tonight is whole wheat pasta with tomatoe sauce with sauted italian sausage, onion and green pepper on top

    last night was a good one:
    -diced bonelss chicken in 2 tbsp of italian dressing cooked through
    -diced tomatoe
    -shredded iceberg lettuce
    -and about 2 tbsp of shredded cheddar
    and wrapped up in a large old el paso torilla wrap
  • Chinese stir fry, with pork, bell pepper, carrot and a bit of pineapple in a sweet and sour sauce. Homemade of.c.
    I really like making Chinese (and other asian) since it can be made without using pasta/noodles/rice/potatoes so I avoid those carbohydrates or whatever those are called.

    Along with a tossed salad with balsamic vinegar for my dressing.

    Tonight we baked Cornish game hens using lots of spices and garlic with a simple stir fry using veggies on hand and a tbs of oyster sauce. I had steamed rice on hand for dh.

    I had baked ham & Lima beans (cooked in the crock pot) with a side of cabbage and cornbread! It was SO good!
  • We had tortilla pizzas*, roasted veges and salad. My plate was HUGE LOL.

    *Tortilla pizzas I make as follows (one each)

    1 smallish tortilla (ours are about 46g each)
    2 tbsp tomato paste/puree
    avocado
    sliced zucchini
    olives
    cherry tomatoes
    mushrooms
    25g edam cheese
    dried herbs

  • stir fry beef with lots of bean sprouts, carrots and scallion. I used my own stir fry sauce of garlic, ginger, soy and sesame oil. served alone.

    Trying to prep dinner ahead - Im stuck at home for five days on sick leave and I dont want to have to cook much, just need to get my rest up again..

    Making a homemade bolognese, fresh lemon-basil linguine (yes, I made this from scratch) and garlic bread for my husband.


    For me, I am going to take some of that bolognese and sauce up some roasted spaghetti squash for me, sans any bread...

    try turkey meatballs by butterball they are already seasoned and my husband just adds spagetti sause it so good and packed with protein. u can find it in themeat department next to turkey ground beef

    One of my Janet & Greta favourites (I will cook my way through all of their cookbooks eventually) - Rome on the Range soup! It's roasted tomato and red bell pepper soup with meatballs. The recipe is in the thread below but I highly suggest any of their cookbooks, I've never once been disappointed with one of their recipes.

    tonight is pork roast, with baked sweet potatoes and steamed carrots. havent decided how im seasaoing the pork yet, probably garlic and onion with some fennel salt.
